1/2 cup of raw tahini
5-8 tablespoons lemon or lime
2 cloves crushed garlic
2 tablespoons quality olive oil
5 tablespoons coriander / chopped parsley / dill
Salt to taste
Mix all the ingredients in a large bowl until the mixture is completely uniform. Finally, add more lemon or salt to taste.
The sauce is served immediately or kept in an airtight jar in the refrigerator for up to 3 days.
