Now that warmer days are here, lighter meals like soup and salads can make a return to the menu. This fresh and tasty salad provides you with several portions of fruit and vegetables. Thanks to its high protein and fiber content, you won’t get hungry in the mid-afternoon, and it’s light enough to serve as a side for dinner. Toasting the nuts yourself will really bring out the flavor and crunch, but you can buy roasted nuts if you’re short on time.

Ingredients (to serve 4):

  • 2 ripe avocados
  • 1/2 cup of green olives, pitted
  • 1 romaine lettuce
  • 1 1/2 cups of fresh spinach or similar leaves
  • 1 cup of baby tomatoes
  • 2 tablespoons of olive oil
  • A small bunch of fresh basil
  • 2 tins of butter beans
  • Salt and pepper, for seasoning
  • 1/2 cup of toasted nuts

Instructions:

  1. Carefully slice all of the olives in half.
  2. Slice all of the tomatoes into halves or quarters.
  3. Shred the fresh basil and mix this into the olive oil. Season well with salt and pepper.
  4. Remove the stones from the avocados, mash the flesh with a fork.
  5. Drain the beans and rinse them under cold running water.
  6. Finely shred the lettuce and tear around half of the spinach leaves in half (don’t worry about being too precise).
  7. In a large salad bowl, mix the spinach, lettuce, beans and tomatoes. Pour over the oil and mix again.
  8. Serve the salad into bowls or plates, then top with a quarter of the mashed avocado and a quarter of the nuts.

You will need to make sure that the mangoes are as ripe and as sweet as possible, so it may be worth waiting just a few more weeks until they are perfect.

Ingredients (4 servings):

  • 2 ripe mangoes
  • Juice of 1 lime
  • 2 teaspoons of chilli oil
  • 2 teaspoons of soy sauce
  • 1 1/2 cups of fresh spinach
  • 1 cup of chickpeas, drained

With summer around the corner, many people are starting to incorporate salads into their diets. Still, many still feel that salads are boring. We are here to tell you that you can make your salads fun and exciting. Try this recipe for lentil and quinoa salad and never opt for limp lettuce again.

Ingredients:

  • 1 onion
  • Half a cucumber
  • Half a sweet potato
  • Handful cherry tomatoes
  • 1 cup of lentils of choice
  • 1 cup of quinoa of choice
  • Tahini for drizzling

Instructions

  1. Cut the sweet potato into cubes, and place it on a tray.
  2. Roast it in the oven till soft and golden.
  3. While the sweet potato is roasting add quinoa and lentils to a saucepan and simmer until cooked.
  4. Transfer quinoa and lentils to a large mixing bowl and let it cool down.
  5. Cut your onion into thin slices, and cut the tomatoes and cucumbers into cubes.
  6. Once the sweet potato is roasted and the quinoa and lentils have cooled down add all vegetables to the bowl and combine well.
  7. Drizzle tahini over the salad for a perfect finish.

Instructions:

  1. Finely slice the onion.

You will need to make sure that the mangoes are as ripe and as sweet as possible, so it may be worth waiting just a few more weeks until they are perfect.

Ingredients (4 servings):

  • 2 ripe mangoes
  • Juice of 1 lime
  • 2 teaspoons of chilli oil
  • 2 teaspoons of soy sauce
  • 1 1/2 cups of fresh spinach
  • 1 cup of chickpeas, drained
  • 1/2 cup of toasted nuts and seeds, of your choice

Instructions:

  1. Carefully peel and cube the mangoes.
  2. Juice the lime and combine this with the chili oil and soy sauce.

With summer around the corner, many people are starting to incorporate salads into their diets. Still, many still feel that salads are boring. We are here to tell you that you can make your salads fun and exciting. Try this recipe for lentil and quinoa salad and never opt for limp lettuce again.

Ingredients:

  • 1 onion
  • Half a cucumber
  • Half a sweet potato
  • Handful cherry tomatoes
  • 1 cup of lentils of choice
  • 1 cup of quinoa of choice
  • Tahini for drizzling

Instructions

  1. Cut the sweet potato into cubes, and place it on a tray.
  2. Roast it in the oven till soft and golden.
  3. While the sweet potato is roasting add quinoa and lentils to a saucepan and simmer until cooked.
  4. Transfer quinoa and lentils to a large mixing bowl and let it cool down.
  5. Cut your onion into thin slices, and cut the tomatoes and cucumbers into cubes.
  6. Once the sweet potato is roasted and the quinoa and lentils have cooled down add all vegetables to the bowl and combine well.
  7. Drizzle tahini over the salad for a perfect finish.

  • 1 large fennel bulb (or 2 smaller ones)
