Pumpkin is versatile. It can be added to smoothies or your morning yogurt. You can roast it and add it to pasta or use it in your soups. It is a great side for your protein and can also be used for sweet pies and in other baked goods.

It’s the season for pumpkin everything, but if you are bored with the typical Pumpkin pie, here are three alternative pumpkin dessert recipes you can try.

Pumpkin Cheese Cake Recipe

Ingredients:

Crust:
• 2 cups graham cracker crumbs
• 6 tablespoons unsalted butter, melted
• 1/4 cup granulated sugar
• 1 teaspoon pumpkin pie spice


For the Cheesecake:
• 4 8-ounce packages of cream cheese, softened
• 1 cup granulated sugar
• 1/4 cup packed light brown sugar
• 3 large eggs
• 1 can (15 oz.) pure pumpkin puree
• 1/3 cup heavy cream
• 2 teaspoons pure vanilla extract
• 1 tablespoon pumpkin pie spice

Instructions:

  1. Crush the graham crackers and add the melted butter, sugar, and pumpkin spice, mix well. Press the crumbs into a 9-inch springform pan wrapped in foil to prevent leaks when using a water bath, lightly coated with non-stick cooking spray. Bake for 10 mins.
  2. For the filling: beat together the cream cheese with the sugars until light and fluffy.
  3. Add in the eggs, pumpkin, and heavy cream, followed by the vanilla and pumpkin pie spice. 
  4. Pour the filling into your prepared crust and bake the cheesecake in a water bath for about an hour.
  5. Once the cheesecake is done baking, crack the oven door, turn the oven off, and let the cheesecake cool for 1 hour in the cooling oven, before placing it on a cooling rack to cool.
  6. Put in the refrigerator to completely set, and enjoy! 

Pumpkin Gelato

Ingredients:

  • 1 cup pumpkin puree
  • 1 1/4 cups milk
  • 3/4 cup cream
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/2 cup brown sugar

Instructions:

  1. In a large bowl beat together pumpkin puree,  milk, cream, vanilla, cinnamon, and brown sugar for approximately 1 minute. 
  2. Then pour into the ice cream maker and follow machine instructions.   
  3. Put it into a bowl or on a cone and add your favorite toppings.

No Bake Pumpkin Bites

Ingredients:

  • 1/2 cup nut butter
  • 1/4 cup pumpkin puree
  • 3 tbsp maple syrup
  • 1 tsp vanilla
  • 1/4 cup coconut flour  (or 3/4-1 cup almond flour)
  • 1 tbsp pumpkin pie spice
  • 1/4 tsp salt (if nut butter isn’t salted)
  • 1/2 cup mini chocolate chips + 1 cup melted chocolate for dipping.

Instructions:

  1. In a large bowl, mix together the nut butter, pumpkin, maple syrup, and vanilla.
  2. Add in the flour, pumpkin pie spice, and salt. Stir till combined.
  3. Stir in the chocolate chips and place in the fridge for ten minutes.
  4. Whilst the dough is in the fridge, melt the chocolate for dipping. You can add 1 tsp coconut oil to the chocolate and melt in 30-second increments in the microwave.
  5. Take the dough out of the fridge and roll it into balls. Dip it in melted chocolate.
  6. Place it in fridge or freezer to harden.

Nothing says “fall” like pumpkin spice syrup. Whether you have it in a latte, on your pancakes, or in a cocktail, it’s delicious and festive. Luckily, it’s also not that hard to make for yourself. “Pumpkin spice” actually only refers to the spices used to flavor pumpkin pie, but these days most syrups do have real pumpkin in them. Here’s how to make this orange syrup at home. There are a lot of different recipes out there, so you can mix and match as you like. However, here’s the basic gist:

Ingredients

  • 2 tablespoons pumpkin puree (not pumpkin pie mix. You can buy canned puree or make it yourself by cooking the pumpkin and then blending it smooth.)
  • 1 cup water
  • 1 cup sugar (you can play around with brown sugar and maple syrup as well, if you prefer a darker/more molasses-y sweetness)
  • 1.5 tablespoons pumpkin pie spice
  • If you don’t have pumpkin pie spice, you can use individual spices, a few shakes each of:
  • Cinnamon, cloves, nutmeg, ginger. Optional: allspice, cardamom, anise

Directions

Combine all of your ingredients in a medium saucepan on medium heat. Bring to a boil, stirring regularly. Then lower and let simmer until everything is combined and uniform. Keep stirring so it doesn’t burn or stick to the bottom. Let it cool in the pan until it’s ready to be poured into a glass bottle or jar. Depending on your puree, it may be a bit stringy, and if this is the case, you can strain it if you like.

Pumpkin Cheese Cake Recipe

Ingredients:

Crust:
• 2 cups graham cracker crumbs
• 6 tablespoons unsalted butter, melted
• 1/4 cup granulated sugar
• 1 teaspoon pumpkin pie spice


For the Cheesecake:
• 4 8-ounce packages of cream cheese, softened
• 1 cup granulated sugar
• 1/4 cup packed light brown sugar
• 3 large eggs
• 1 can (15 oz.) pure pumpkin puree
• 1/3 cup heavy cream
• 2 teaspoons pure vanilla extract
• 1 tablespoon pumpkin pie spice

Instructions:

  1. Crush the graham crackers and add the melted butter, sugar, and pumpkin spice, mix well. Press the crumbs into a 9-inch springform pan wrapped in foil to prevent leaks when using a water bath, lightly coated with non-stick cooking spray. Bake for 10 mins.
  2. For the filling: beat together the cream cheese with the sugars until light and fluffy.
  3. Add in the eggs, pumpkin, and heavy cream, followed by the vanilla and pumpkin pie spice. 
  4. Pour the filling into your prepared crust and bake the cheesecake in a water bath for about an hour.
  5. Once the cheesecake is done baking, crack the oven door, turn the oven off, and let the cheesecake cool for 1 hour in the cooling oven, before placing it on a cooling rack to cool.
  6. Put in the refrigerator to completely set, and enjoy! 

Pumpkin Gelato

Ingredients:

  • 1 cup pumpkin puree
  • 1 1/4 cups milk
  • 3/4 cup cream
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/2 cup brown sugar

Instructions:

  1. In a large bowl beat together pumpkin puree,  milk, cream, vanilla, cinnamon, and brown sugar for approximately 1 minute. 
  2. Then pour into the ice cream maker and follow machine instructions.   
  3. Put it into a bowl or on a cone and add your favorite toppings.

No Bake Pumpkin Bites

Ingredients:

  • 1/2 cup nut butter
  • 1/4 cup pumpkin puree
  • 3 tbsp maple syrup
  • 1 tsp vanilla
  • 1/4 cup coconut flour  (or 3/4-1 cup almond flour)
  • 1 tbsp pumpkin pie spice
  • 1/4 tsp salt (if nut butter isn’t salted)
  • 1/2 cup mini chocolate chips + 1 cup melted chocolate for dipping.

Instructions:

  1. In a large bowl, mix together the nut butter, pumpkin, maple syrup, and vanilla.
  2. Add in the flour, pumpkin pie spice, and salt. Stir till combined.
  3. Stir in the chocolate chips and place in the fridge for ten minutes.
  4. Whilst the dough is in the fridge, melt the chocolate for dipping. You can add 1 tsp coconut oil to the chocolate and melt in 30-second increments in the microwave.
  5. Take the dough out of the fridge and roll it into balls. Dip it in melted chocolate.
  6. Place it in fridge or freezer to harden.

Nothing says “fall” like pumpkin spice syrup. Whether you have it in a latte, on your pancakes, or in a cocktail, it’s delicious and festive. Luckily, it’s also not that hard to make for yourself. “Pumpkin spice” actually only refers to the spices used to flavor pumpkin pie, but these days most syrups do have real pumpkin in them. Here’s how to make this orange syrup at home. There are a lot of different recipes out there, so you can mix and match as you like. However, here’s the basic gist:

Ingredients

  • 2 tablespoons pumpkin puree (not pumpkin pie mix. You can buy canned puree or make it yourself by cooking the pumpkin and then blending it smooth.)
  • 1 cup water
  • 1 cup sugar (you can play around with brown sugar and maple syrup as well, if you prefer a darker/more molasses-y sweetness)
  • 1.5 tablespoons pumpkin pie spice
  • If you don’t have pumpkin pie spice, you can use individual spices, a few shakes each of:
  • Cinnamon, cloves, nutmeg, ginger. Optional: allspice, cardamom, anise

Directions

Combine all of your ingredients in a medium saucepan on medium heat. Bring to a boil, stirring regularly. Then lower and let simmer until everything is combined and uniform. Keep stirring so it doesn’t burn or stick to the bottom. Let it cool in the pan until it’s ready to be poured into a glass bottle or jar. Depending on your puree, it may be a bit stringy, and if this is the case, you can strain it if you like.
