Fall brings some of the yummiest vegetables to harvest: pumpkins. Of course they are technically a fruit, but they’re often used as a culinary vegetable. If you have pumpkins lying around from Halloween and you want to eat them some way besides pie, you may be looking for meal inspiration. Luckily there’s a lot of delicious ways to eat pumpkin as a meal.

Creamy Pumpkin Soup

Try making this delicious soup by combining water, spices, and pumpkin puree with some greens. You can top with yogurt or sour cream, or you can try a Thai twist by adding in coconut milk and curry powder along with kaffir lime leaves and other herbs.

Pumpkin Pasta Sauce

Pumpkin also makes a delicious base for pasta sauce. All you need to do is roast it with onions, cook them down in some veggie broth, then add whatever spices and herbs you like. This sauce will go great with any pasta. Add some veggies and some chicken for extra protein and vitamins.
