Pumpkin pesto is a charmingly simple, tasty and healthy way to make the most of your pumpkin seeds this Halloween. It is a great complement to pasta meals, breads, pies and roasted vegetables.

Try out these few simple steps to have your own tasty pumpkin pesto.

Gather Ingredients

To serve 5, you will need 1/2 cup raw pumpkin seeds (65g), 2 tablespoons of olive oil, 1/2 teaspoon kosher salt, 2 cups fresh arugula (40g), 2 cups fresh basil leaf (80g), 1 clove garlic, 1 tablespoon lemon juice, 2 tablespoons water.

Prepare Pumpkin Seeds

Place pumpkin seeds on a baking tray and drizzle them with half the olive oil. Season with salt and pepper.

Bake Seeds

Next, bake seasoned pumpkin seeds in the oven at 375°F for 20 minutes. Stir halfway through. When the seeds are ready, they should have turned golden brown.

Make Pesto

When the seeds have turned brown, put them in a food processor. Combine them with the basil, arugula, garlic, the rest of the olive oil, lemon juice, water and salt and process until smooth.

Serve

Once the pesto is smooth, pour it out of the processor into a nice bowl or pan before serving. It goes nicely with pasta dishes, breads and salads.

While it’s still early September, it’s never too early for Halloween enthusiasts to start preparing for October’s biggest holiday. Whether you’re planning on throwing a party, or just enjoying the Halloween season in general, these three recipes are sure to get you in the mood for the spookiest day of fall.

Pumpkin soup

The best thing about this soup is it only requires three ingredients (along with some spices): pumpkin, olive oil, and Greek yogurt.

Instructions:

  1. Cut the pumpkin into thick slices, place them in a baking pan lined with parchment paper, add some olive oil on top, and roast them in the oven for about 40 minutes on 450°F. This will help soften the meat of the pumpkin and make the blending process easier.
  2. Once the pumpkin slices are done, put them in a blender, with a few spoonfuls of Greek yogurt for extra creaminess. Be heavy with your seasoning, pumpkins demand a lot of salt and pepper, since they are very sweet by nature. Add tumeric, smoked paprika, garlic powder, and some minced ginger. For garnish, add some pumpkin seeds and fresh parsley.

Honey Roasted Baby Carrots

All you need to make these delicious roasted carrots are carrots, olive oil, Greek yogurt, honey, and some spices (which you probably already have in your kitchen.

Instructions:

  1. Peel the carrots and cut the tops off. Place them in a baking tray and add some olive oil. Season them with salt, pepper, basil, and rosemary, and roast them for about 30-40 minutes on 450 °F.
  2. Ten minutes before pulling them out of the oven, drizzle some honey on top, making sure to coat them evenly. When you get them out of the oven, they should be a little charred on one side, this adds a bitter note to the flavor, balancing the sweetness of the carrots and the honey. Serve with some greek yogurt on the side.

Roasted Sweet Potatoes

All you need for these sweet potatoes are sweet potatoes, olive oil, and some spices.

Instructions:

  1. Peel the sweet potatoes and cut them into circles about half an inch thick.
  2. Season with a mix of salt, pepper, paprika, and chili powder, drizzle with some olive oil and place them in a preheated oven for about 45 minutes on 450°F.
  3. Flip them halfway through the baking process, just to make sure they get a nice crisp on both sides.

What better way to celebrate colder days than with a curry pumpkin soup? This delicious recipe will become your favorite once you try it.

Ingredients

The ingredient list might look like a long one but it will be totally worth it. For this curry pumpkin soup, you will need 1 2-pound pumpkin without seeds and pulp, 1 teaspoon curry powder, 1 diced onion, 1 tablespoon coconut oil, 3/4 teaspoon coriander, 1/2 teaspoon cumin, 2-4 minced garlic cloves, 3 1/2 cups vegetable stock, 1/4 teaspoon cloves, 1 tablespoon minced ginger, salt, cayenne pepper, 1/2 cup coconut milk, 1 7-ounce Greek yogurt, parsley and pumpkin seeds. The parsley, Greek yogurt, and seeds you will use for garnish.

How To Make It

Preheat oven to 350 F degrees. Get the pumpkin and rub it with the coconut oil. Put the halves on a pan side down with the flesh and roast it for 45 minutes (it should be tender). Get the flesh out of the pumpkin once it’s cool. Put a pot on medium-high heat to melt the oil. Add the minced onion and don’t stir it. Once they’re brown you can flip the pieces to the other side. Add the cloves, cumin, curry, and coriander. Mix everything very well for one minute. This is when you add the coconut milk, pumpkin, and stock. Cook until it boils. Blend the soup until you get a smooth mixture. Cook it again on medium-high heat. Your curry pumpkin soup is ready.

Simply cut a round hole in the top of the pumpkin. Scoop out the flesh and the seeds of the pumpkin and leave to one side. Cut up the remaining pumpkin into about 8 pieces, place on a baking tray. After brushing them with olive oil and seasoning with salt and pepper, bake in the oven for 1 hour 15 minutes.

Pumpkin pesto is a charmingly simple, tasty and healthy way to make the most of your pumpkin seeds this Halloween. It is a great complement to pasta meals, breads, pies and roasted vegetables.

Try out these few simple steps to have your own tasty pumpkin pesto.

Gather Ingredients

To serve 5, you will need 1/2 cup raw pumpkin seeds (65g), 2 tablespoons of olive oil, 1/2 teaspoon kosher salt, 2 cups fresh arugula (40g), 2 cups fresh basil leaf (80g), 1 clove garlic, 1 tablespoon lemon juice, 2 tablespoons water.

Prepare Pumpkin Seeds

Place pumpkin seeds on a baking tray and drizzle them with half the olive oil. Season with salt and pepper.

Bake Seeds

Next, bake seasoned pumpkin seeds in the oven at 375°F for 20 minutes. Stir halfway through. When the seeds are ready, they should have turned golden brown.

Make Pesto

When the seeds have turned brown, put them in a food processor. Combine them with the basil, arugula, garlic, the rest of the olive oil, lemon juice, water and salt and process until smooth.

Serve

Once the pesto is smooth, pour it out of the processor into a nice bowl or pan before serving. It goes nicely with pasta dishes, breads and salads.

While it’s still early September, it’s never too early for Halloween enthusiasts to start preparing for October’s biggest holiday. Whether you’re planning on throwing a party, or just enjoying the Halloween season in general, these three recipes are sure to get you in the mood for the spookiest day of fall.

Pumpkin soup

The best thing about this soup is it only requires three ingredients (along with some spices): pumpkin, olive oil, and Greek yogurt.

Instructions:

  1. Cut the pumpkin into thick slices, place them in a baking pan lined with parchment paper, add some olive oil on top, and roast them in the oven for about 40 minutes on 450°F. This will help soften the meat of the pumpkin and make the blending process easier.
  2. Once the pumpkin slices are done, put them in a blender, with a few spoonfuls of Greek yogurt for extra creaminess. Be heavy with your seasoning, pumpkins demand a lot of salt and pepper, since they are very sweet by nature. Add tumeric, smoked paprika, garlic powder, and some minced ginger. For garnish, add some pumpkin seeds and fresh parsley.

Honey Roasted Baby Carrots

All you need to make these delicious roasted carrots are carrots, olive oil, Greek yogurt, honey, and some spices (which you probably already have in your kitchen.

Instructions:

  1. Peel the carrots and cut the tops off. Place them in a baking tray and add some olive oil. Season them with salt, pepper, basil, and rosemary, and roast them for about 30-40 minutes on 450 °F.
  2. Ten minutes before pulling them out of the oven, drizzle some honey on top, making sure to coat them evenly. When you get them out of the oven, they should be a little charred on one side, this adds a bitter note to the flavor, balancing the sweetness of the carrots and the honey. Serve with some greek yogurt on the side.

Roasted Sweet Potatoes

All you need for these sweet potatoes are sweet potatoes, olive oil, and some spices.

Instructions:

  1. Peel the sweet potatoes and cut them into circles about half an inch thick.
  2. Season with a mix of salt, pepper, paprika, and chili powder, drizzle with some olive oil and place them in a preheated oven for about 45 minutes on 450°F.
  3. Flip them halfway through the baking process, just to make sure they get a nice crisp on both sides.

What better way to celebrate colder days than with a curry pumpkin soup? This delicious recipe will become your favorite once you try it.

Ingredients

The ingredient list might look like a long one but it will be totally worth it. For this curry pumpkin soup, you will need 1 2-pound pumpkin without seeds and pulp, 1 teaspoon curry powder, 1 diced onion, 1 tablespoon coconut oil, 3/4 teaspoon coriander, 1/2 teaspoon cumin, 2-4 minced garlic cloves, 3 1/2 cups vegetable stock, 1/4 teaspoon cloves, 1 tablespoon minced ginger, salt, cayenne pepper, 1/2 cup coconut milk, 1 7-ounce Greek yogurt, parsley and pumpkin seeds. The parsley, Greek yogurt, and seeds you will use for garnish.

How To Make It

Preheat oven to 350 F degrees. Get the pumpkin and rub it with the coconut oil. Put the halves on a pan side down with the flesh and roast it for 45 minutes (it should be tender). Get the flesh out of the pumpkin once it’s cool. Put a pot on medium-high heat to melt the oil. Add the minced onion and don’t stir it. Once they’re brown you can flip the pieces to the other side. Add the cloves, cumin, curry, and coriander. Mix everything very well for one minute. This is when you add the coconut milk, pumpkin, and stock. Cook until it boils. Blend the soup until you get a smooth mixture. Cook it again on medium-high heat. Your curry pumpkin soup is ready.
