Pumpkin pie is the ideal dessert for this season. The total cooking time is 1 hour and 10 minutes.

Ingredients:

  • 4 large eggs
  • 1 cup vegetable oil
  • 2 teaspoons baking soda
  • 1 15-oz can solid-packed pumpkin
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon ground cloves
  • 1 and 1/2 cups white granulated sugar
  • 1/4 teaspoon ground nutmeg

Cream cheese:

  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar
  • 1/8 teaspoon salt
  • 1 8-oz package full-fat cream cheese, room temperature
  • 1/4 teaspoon pumpkin pie spice
  • chopped pecans
  • 1/2 cup unsalted butter, room temperature

Instructions:

  1. Set the oven to 350 F degrees and prepare a 10-inch bundt pan.
  2. Combine the eggs, white sugar, vanilla extract, brown sugar, pumpkin, oil together in a bowl. Start mixing them to combine all the ingredients.
  3. In a second bowl mix the ground cloves, baking soda, cinnamon, pumpkin pie spice, ground nutmeg, flour, salt, and ground ginger. Mix to combine them all.
  4. Now add the dry and wet ingredients all in the same bowl and mix them well.
  5. Add the cake mix to the bund pan and bake it in the oven for 50 to 65 minutes. Let it cool down for 10 minutes.
  6. In the meantime, you can prepare the frosting. Beat the butter and the cream cheese, which should both be at the same temperature.
  7. Include the pumpkin pie spice, salt, powdered sugar, and vanilla. Beat again. Add it on top of the pumpkin cane and decorate with pecans.

Lemon meringue pie is a classic dessert that’s super easy to prepare. It’s the perfect crowd pleaser for any gathering – so why not show off your baking skills.

Ingredients:

  • 125 g chilled and chopped butter
  • 2 tablespoons icing sugar
  • 225 g plain flour
  • 2 1/2 tablespoons iced water

For the Filling:

  • 250 ml fresh lemon juice
  • 4 eggs
  • 50 g cornflour
  • 430 g caster sugar
  • 125 ml water
  • 0 g butter, chopped

Instructions:

  1. Combine the butter with flour and icing sugar. Use your fingers and mix it until you get a breadcrumb-like mixture.
  2. Pour in the water and mix again. At this point, you will get a dough, which you should roll in a round shape.
  3. Add it on to the bottom of a 23cm pie dish. Leave the dish in the fridge for half an hour.
  4. Set the oven to 180 C degrees and add pastry weights in the dish. Bake the dough for 15 minutes.
  5. Now, take out the weights and bake for 15 to 20 minutes more. When it’s done leave it to cool down.
  6. While you’re waiting you can make the lemon filling. Mix the water, cornflour, and one half of the sugar in a saucepan.
  7. Cook the ingredients together for 4 minutes on the stove on medium heat. When it starts to boil cook for 1 more minute while mixing.
  8. Take it away from the heat and add in the egg yolks and butter. Pour it in a bowl and leave it in the fridge for at least 3 hours.
  9. Set the oven to 190 C degrees.
  10. Prepare the meringue by beating the egg whites until you get white peaks. Slowly add the rest of the sugar.
  11. Add the lemon filling on top of the base and finish off with the meringue. Bake the lemon meringue pie for 5 minutes.

When you need a fast and delicious meal for the whole family, tamale pie is the way to go. This whole recipe is done in less than an hour, and the prep is so simple. It’s meant for six servings, but you’ll definitely finish the whole thing- it’s that good!

Ingredients:

  • 1/2 cup water
  • 1 beaten egg
  • 2 chopped medium onion
  • 2/3 cup milk
  • 1 tablespoon chili powder
  • 1 pound ground beef
  • 12 oz corn muffin mix
  • 1 can tomato condensed tomato soup ( 10 3/4 oz)
  • 1 cup shredded cheddar cheese
  • 1 8-oz can whole kernel corn

Instructions:

  1. Set the oven to 350 F degrees and get a skillet.
  2. Add the onion and beef in the skillet and cook it until the meat is done. Remove all of the fat from the skillet.
  3. Now, add the water, corn, soup, and chili powder. Wait until the mixture in the skillet starts boiling.
  4. You can now transfer all of it into a baking dish.
  5. Mix the egg, corn muffin mix, and milk together. Add it on top of the beef in the baking dish.
  6. Place the dish in the oven for half an hour. Top it off with cheese when it’s done and add an extra minute in the oven.
  7. The tamale pie is ready to be served.

Lemon meringue pie is a classic dessert that’s super easy to prepare. It’s the perfect crowd pleaser for any gathering – so why not show off your baking skills.

Ingredients:

  • 125 g chilled and chopped butter
  • 2 tablespoons icing sugar
  • 225 g plain flour
  • 2 1/2 tablespoons iced water

For the Filling:

  • 250 ml fresh lemon juice
  • 4 eggs
  • 50 g cornflour
  • 430 g caster sugar
  • 125 ml water
  • 0 g butter, chopped

Instructions:

  1. Combine the butter with flour and icing sugar. Use your fingers and mix it until you get a breadcrumb-like mixture.
  2. Pour in the water and mix again. At this point, you will get a dough, which you should roll in a round shape.
  3. Add it on to the bottom of a 23cm pie dish. Leave the dish in the fridge for half an hour.
  4. Set the oven to 180 C degrees and add pastry weights in the dish. Bake the dough for 15 minutes.
  5. Now, take out the weights and bake for 15 to 20 minutes more. When it’s done leave it to cool down.
  6. While you’re waiting you can make the lemon filling. Mix the water, cornflour, and one half of the sugar in a saucepan.
  7. Cook the ingredients together for 4 minutes on the stove on medium heat. When it starts to boil cook for 1 more minute while mixing.
  8. Take it away from the heat and add in the egg yolks and butter. Pour it in a bowl and leave it in the fridge for at least 3 hours.
  9. Set the oven to 190 C degrees.
  10. Prepare the meringue by beating the egg whites until you get white peaks. Slowly add the rest of the sugar.
  11. Add the lemon filling on top of the base and finish off with the meringue. Bake the lemon meringue pie for 5 minutes.

When you need a fast and delicious meal for the whole family, tamale pie is the way to go. This whole recipe is done in less than an hour, and the prep is so simple. It’s meant for six servings, but you’ll definitely finish the whole thing- it’s that good!

Ingredients:

  • 1/2 cup water
  • 1 beaten egg
  • 2 chopped medium onion
  • 2/3 cup milk
  • 1 tablespoon chili powder
  • 1 pound ground beef
  • 12 oz corn muffin mix
  • 1 can tomato condensed tomato soup ( 10 3/4 oz)
  • 1 cup shredded cheddar cheese
  • 1 8-oz can whole kernel corn

Instructions:

  1. Set the oven to 350 F degrees and get a skillet.
  2. Add the onion and beef in the skillet and cook it until the meat is done. Remove all of the fat from the skillet.
  3. Now, add the water, corn, soup, and chili powder. Wait until the mixture in the skillet starts boiling.
  4. You can now transfer all of it into a baking dish.
  5. Mix the egg, corn muffin mix, and milk together. Add it on top of the beef in the baking dish.
  6. Place the dish in the oven for half an hour. Top it off with cheese when it’s done and add an extra minute in the oven.
  7. The tamale pie is ready to be served.
