Pumpkin pie is the ideal dessert for this season. The total cooking time is 1 hour and 10 minutes.
Ingredients:
- 4 large eggs
- 1 cup vegetable oil
- 2 teaspoons baking soda
- 1 15-oz can solid-packed pumpkin
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 cup packed light brown sugar
- 1/2 teaspoon salt
- 2 cups all-purpose flour
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 3/4 teaspoon ground cloves
- 1 and 1/2 cups white granulated sugar
- 1/4 teaspoon ground nutmeg
Cream cheese:
- 1 teaspoon vanilla extract
- 3 cups powdered sugar
- 1/8 teaspoon salt
- 1 8-oz package full-fat cream cheese, room temperature
- 1/4 teaspoon pumpkin pie spice
- chopped pecans
- 1/2 cup unsalted butter, room temperature
Instructions:
- Set the oven to 350 F degrees and prepare a 10-inch bundt pan.
- Combine the eggs, white sugar, vanilla extract, brown sugar, pumpkin, oil together in a bowl. Start mixing them to combine all the ingredients.
- In a second bowl mix the ground cloves, baking soda, cinnamon, pumpkin pie spice, ground nutmeg, flour, salt, and ground ginger. Mix to combine them all.
- Now add the dry and wet ingredients all in the same bowl and mix them well.
- Add the cake mix to the bund pan and bake it in the oven for 50 to 65 minutes. Let it cool down for 10 minutes.
- In the meantime, you can prepare the frosting. Beat the butter and the cream cheese, which should both be at the same temperature.
- Include the pumpkin pie spice, salt, powdered sugar, and vanilla. Beat again. Add it on top of the pumpkin cane and decorate with pecans.
