Tacos are a popular food choice and for good reason. They are super versatile and delicious, while also being easy to whip up. If you’re a vegan who loves tacos who’s wondering how to veganize this meal, then here are three tasty and simple ideas. 

Fried Beans, Corn, and Veggies

Beans are a great choice for vegans, as they’re easy, healthy, high protein, and delicious. For this easy meal simply open a can of beans and a can of corn. Fry them up with some onion, bell pepper, and zucchini with cumin, paprika, oregano, salt, and pepper. Load this filling into the taco shells and dollop some smashed avocado on.

Tofu Scramble and Salad

For a vegan version of a ‘breakfast style’ taco. Crumble up some firm tofu and add to a pan with oil. Add a sprinkle of turmeric, some black salt, and some black pepper. Stir well to ensure the tofu is evenly coated and then gently fry for 5-10 minutes. Chop up some crunchy lettuce and tomatoes and pop into the taco shells and then add the tofu scramble on top. 

Jackfruit, Slaw, and Raita

Jackfruit is great if you want a totally vegan meal that has a hearty, meaty texture. Heat some oil in a pan and then add the jackfruit and season well with coriander, ginger, chili flakes, and black pepper. Add a dash of soy sauce and fry for 10-15 minutes, stirring frequently. In the meantime whip up some slaw and some raita using soya yogurt. Chuck all of this into the taco shells and enjoy.

Bacanora

Mezcal

Mezcal is a name for all agave-based alcohol drinks but also a specific type of liquor. Tequila is one type of mezcal, and the aforementioned bacanora is another. Mexcal (the variety) can be made in only nine Mexican states: Oaxaca, Michoacán, Durango, Puebla, and many more. Most often, it’s made from espadin agave, but it can use other varieties too.

Sotol

Sotol is one of the Mexican spirits that aren’t made from agave, but from the sotol plant, also known as a desert spoon. Pork tenderloin is one of the best cuts of meat to work with. Not only is this hearty and lean cut of pork healthy and easy to prepare, but it also can be seasoned and flavored with basically any style that you like!

Spicing pork tenderloin with Mexican flavors is one of the best options. Do you want to learn how to make it? Here’s your guide!

Ingredients

  • One 1-pound pork tenderloin
  • ¼ cup orange juice
  • 2 tablespoons Cholula hot sauce
  • 1 ½ tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 1 teaspoon black pepper

Start off by placing the pork tenderloin and all of the rest of the ingredients in a plastic bag and mixing them thoroughly until a marinade is formed. You’ll want to place this inside of your refrigerator and marinate for approximately 4-6 hours.

Once the marination process is finished, preheat your oven to 450 degrees F. 

While the oven is preheating, remove the marinated pork tenderloin from the bag and place into a large skillet on your stove on medium-high heat. Cook evenly on all sides for 3-4 minutes, or until the exterior of the tenderloin is browned.

Finally, place the tenderloin on an oven sheet and cook in the oven for 10-12 minutes, or until the internal temperature of the meat has reached 145 degrees F. Allow to rest for 10 minutes before serving.

One of our go-to dishes when we’re short on time is chicken wings. Easily made in the oven after being marinated, the versatility of wings also allow you to imbue them with whatever flavors you prefer to make a personalized dish.

Mexican wings are one of the best variations to prepare, adding a spicy and citrusy kick to the wings. Here is how to prepare them yourself!

Ingredients

  • 1 pound chicken wings
  • ¼ cup Mexican hot sauce (I use Valentina extra spicy)
  • 2 tablespoons orange juice
  • 1 tablespoon olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon cumin
  • 2 teaspoons paprika
  • 2 teaspoons salt

Instructions

Start off by putting the chicken wings in a large container and adding all of the other liquid ingredients and spices. Put them in your refrigerator and allow to marinate for 6-8 hours.

Once this time is up, preheat your oven to 400  F. Take an oven tray and line it with aluminum foil, and then arrange the wings on the foil and bake in the oven for approximately 45 minutes.

Remove the wings, allow to cool for 10-15 minutes, and then enjoy!

Lebanese immigrants to Mexico in the late 19th and early 20th century brought with them the knowledge of a dish called shawarma which had recently begun spreading throughout the region and gaining popularity.

Have you ever heard of tamarind before?

Tamarind is a fruit that comes from the tree of the same name, which is native to tropical Africa. This tree produces pods full of fruit that contain a brown, pulp-like substance that is used in cuisines in many regions of the world.

Did you know, however, that tamarind is hugely popular in Mexico and is used in a variety of dishes?

This tropical fruit is cultivated widely in Mexico, especially in the regions of Jalisco, Guerrero, Colima, Chiapas, and Veracruz. Its use in Mexican cuisine is especially known in the areas of sauces and sweets.

Tamarind can often be found as a sweeter complement to stronger, spicier flavors in some of the many salsas that are commonly consumed in the country. Chipotle tamarind sauce, for example, is delicious when slathered on top of a plate of enchiladas.

This tropical fruit is often consumed in sweets, too. Tamarind paste is commonly made into candy and combined with other flavors such as watermelon and mango. It can even be used to flavor soft drinks, as Jarritos’ tamarind flavor is one of its most beloved.

Mezcal

Mezcal is a name for all agave-based alcohol drinks but also a specific type of liquor. Tequila is one type of mezcal, and the aforementioned bacanora is another. Mexcal (the variety) can be made in only nine Mexican states: Oaxaca, Michoacán, Durango, Puebla, and many more. Most often, it’s made from espadin agave, but it can use other varieties too.

Sotol

Sotol is one of the Mexican spirits that aren’t made from agave, but from the sotol plant, also known as a desert spoon. This aromatic drink can be enjoyed neat or in a cocktail, but it’s less sweet than agave drinks. It’s a popular ingredient of craft cocktails and provides an amazing, smoky note.

Pork tenderloin is one of the best cuts of meat to work with. Not only is this hearty and lean cut of pork healthy and easy to prepare, but it also can be seasoned and flavored with basically any style that you like!

Spicing pork tenderloin with Mexican flavors is one of the best options. Do you want to learn how to make it? Here’s your guide!

Ingredients

  • One 1-pound pork tenderloin
  • ¼ cup orange juice
  • 2 tablespoons Cholula hot sauce
  • 1 ½ tablespoons olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 1 teaspoon black pepper

Start off by placing the pork tenderloin and all of the rest of the ingredients in a plastic bag and mixing them thoroughly until a marinade is formed. You’ll want to place this inside of your refrigerator and marinate for approximately 4-6 hours.

Once the marination process is finished, preheat your oven to 450 degrees F. 

While the oven is preheating, remove the marinated pork tenderloin from the bag and place into a large skillet on your stove on medium-high heat. Cook evenly on all sides for 3-4 minutes, or until the exterior of the tenderloin is browned.

Finally, place the tenderloin on an oven sheet and cook in the oven for 10-12 minutes, or until the internal temperature of the meat has reached 145 degrees F. Allow to rest for 10 minutes before serving.

One of our go-to dishes when we’re short on time is chicken wings. Easily made in the oven after being marinated, the versatility of wings also allow you to imbue them with whatever flavors you prefer to make a personalized dish.

Mexican wings are one of the best variations to prepare, adding a spicy and citrusy kick to the wings. Here is how to prepare them yourself!

Ingredients

  • 1 pound chicken wings
  • ¼ cup Mexican hot sauce (I use Valentina extra spicy)
  • 2 tablespoons orange juice
  • 1 tablespoon olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon cumin
  • 2 teaspoons paprika
  • 2 teaspoons salt

Instructions

Start off by putting the chicken wings in a large container and adding all of the other liquid ingredients and spices. Put them in your refrigerator and allow to marinate for 6-8 hours.

Once this time is up, preheat your oven to 400  F. Take an oven tray and line it with aluminum foil, and then arrange the wings on the foil and bake in the oven for approximately 45 minutes.

Remove the wings, allow to cool for 10-15 minutes, and then enjoy!

Have you ever heard of tamarind before?

Tamarind is a fruit that comes from the tree of the same name, which is native to tropical Africa. This tree produces pods full of fruit that contain a brown, pulp-like substance that is used in cuisines in many regions of the world.

Did you know, however, that tamarind is hugely popular in Mexico and is used in a variety of dishes?

This tropical fruit is cultivated widely in Mexico, especially in the regions of Jalisco, Guerrero, Colima, Chiapas, and Veracruz. Its use in Mexican cuisine is especially known in the areas of sauces and sweets.

Tamarind can often be found as a sweeter complement to stronger, spicier flavors in some of the many salsas that are commonly consumed in the country. Chipotle tamarind sauce, for example, is delicious when slathered on top of a plate of enchiladas.

This tropical fruit is often consumed in sweets, too. Tamarind paste is commonly made into candy and combined with other flavors such as watermelon and mango. It can even be used to flavor soft drinks, as Jarritos’ tamarind flavor is one of its most beloved.
