Having lemons in the kitchen ready to be used is great as they can add so much flavor and depth to all kinds of dishes. However, sometimes it’s the case that you end up with lots of lemons around that need using and you’re unsure of what to do with them. Here are some ideas for creative uses for lemons to help you out.

As a Window Spray

Lemons are an amazing fruit as they provide so much to the kitchen but also can be used for so many cleaning tasks. They’re particularly good for cleaning glass as they help to achieve that gorgeous, streak-free shine that’s so desirable. Simply mix half a cup of lemon juice with two cups of warm water and half a cup of white vinegar and pour this into a spray bottle. Spray the mixture onto windows and then wipe clean with a microfiber cloth.

To Freshen Up the Microwave

Microwaves are a great invention, but they so often end up totally covered in food, which gradually becomes more solid and stuck the more it’s used. Cleaning this food can be a struggle, but lemons can help to make this an easy job. Take one whole lemon slice it up and add the slices to a microwavable cup filled with water. Heat this in the microwave for five minutes and then leave with the door shut for at least 15 minutes. The lemon juice and steam will help to dislodge the dried food while also leaving a lovely fresh lemon scent.

Is there anything that fits the label of “comfort food” better than macaroni and cheese? A classic combination enjoyed by all ages, mac & cheese is a staple dish in kitchens around the world, but making it from scratch can be a labor of love. Fortunately, the days of neon yellow instant mac are far behind us, and there are now plenty of boxed options that are just as good as homemade. Here are a few you’ll always find in our pantries:

Goodles

Who said mac & cheese can’t be nutritious? Goodles gives a classic a healthy upgrade by creating products that are high in protein, fiber, and 21 different plant-based nutrients. With a variety of flavors like black truffle and cheddar, cacio e pepe, and hatch chile popper, you’d never know you were eating anything other than regular pasta—perfect for picky eaters or anyone looking for a fun and easy meal.

Cabot

Cabot Creamery has been making cheese for over 100 years , so we think it’s only natural that they’ve decided to break into the mac & cheese market. Its new line contains 6 flavors including Yellow Cheddar, Pepper Jack, and 4 cheese Italian, all made with organic pasta and no artificial ingredients.

Annie’s

In a world once dominated by blue boxes containing packets of neon yellow “powdered cheese products,” Annie’s was one of the first brands to create a less-processed alternative. Most iconic is its Shells & White Cheddar, though the company also offers a variety of other traditional and even vegan flavors.

Plant based milks remain incredibly popular, and there are wide variety of reasons – including ethics, taste preferences, and health reasons—why many of us avoid dairy milk. However, buying plant based milks can get expensive, and you don’t always know what’s gone into them. Making your own oat milk is relatively easy, and you can add your own flavorings if you wish to. Check out the simple recipe below, and the suggestions of additions you can make.

Ingredients:

  • 1 clean muslin cloth, 12 inches x 15 inches
  • 1 cup of oats
  • ½ cup of fine oatmeal
  • 2 cups of water
  • ½ teaspoon of salt
  • ½ teaspoon of sugar

Instructions:

  1. In a large bowl, soak the oats and oatmeal along with the sugar and salt in the water for half an hour.
  2. Strain the liquid through the muslin cloth, into a separate large bowl.
  3. Blitz the oats and oatmeal into a smooth paste in the food processor (you may need to add a splash of water. Stir in more water to form a liquid.
  4. Strain this liquid through the muslin cloth again.
  5. Stir the oat milk well (you may wish to blend it to ensure a smooth consistency).
  6. The milk will keep in a sealed container in the fridge for up to one week.

Cinnamon Oat Milk

If you fancy a gently spiced twist on the classic oat milk, simply add 1 teaspoon of cinnamon to the mix at the same time that you add the salt and sugar. This works particularly well in coffee and porridge.

Maple Syrup

If you fancy something a bit sweeter, you can up the sugar content or add a teaspoon of maple syrup at the same time that you add the salt and sugar. Do be aware that if you’re going to use the milk to create savory dishes, the maple syrup may not work as well.

Most of us are aware that cutting down on animal products is one of the most effective ways to reduce our carbon footprint, but did you know that food waste is just as much of a problem? In fact, if food waste were a country, it would be the third highest emitter of greenhouse gasses in the world. While we know that not everyone wants to give up meat and cheese, reducing the amount of food you throw out is a simple way to care for the planet and even save yourself money in the process. Read on for some fun ideas on how to take leftovers to a new level.

Mashed Potatoes

Leftover mashed potatoes aren’t exactly exciting on their own, but with a dash of creativity, you can turn them into a satisfying star dish. One of our favorite ways to use leftover potatoes is by mixing them with some breadcrumbs, shredded cheese, and fresh herbs to make savory potato patties. Just mix shape, then pan-fry in a little oil until golden brown on each side.

Meat

Whether you’re working with beef, chicken, pork, or seafood, you can breathe new life into leftover meat by using it as a filling for stir-fried tacos. Chop or shred your meat into bite-sized pieces, then sauté it with some veggies and a packet of taco seasoning. Spoon it into shells and top with a dollop of sour cream.

Rice

For a quick and satisfying meal, repurpose leftover rice into stuffed bell peppers. Mix the cooked rice with diced veggies, your choice of protein, and a drizzle of olive oil, then stuff the mixture into bell peppers and sprinkle with some cheese. Cover with aluminum foil, then bake at 350 F for about 30 minutes.

Vegetables and desserts rarely go well together, though carrot cake is a notable exception to this rule. Carrots have a subtle sweetness that pairs well with other common dessert flavors like cinnamon, and their high water content is a great way to add moisture without sacrificing texture.

While we’ll always love a good old-fashioned carrot cake (especially if it’s covered in cream cheese frosting), sometimes we’re in the mood for something a bit healthier. Fortunately, some creators have found ways to incorporate the flavors of carrot cake into nutritious and delicious treats that are every bit as good as the real thing.

Carrot Cake Energy Balls

Traditional cake isn’t exactly known for its portability, so when we’re in need of a snack on the go, we love these carrot cake energy balls. They’re made with fresh, wholesome ingredients like shredded carrots and walnuts and sweetened with dates instead of traditional sugar. Leave them bare or roll in shredded coconut for flavor and additional healthy fat.

Carrot Cake Baked Oatmeal

Start your day right with this carrot cake-oatmeal hybrid by Minimalist Baker. Along with grated carrots, it contains all of the classic add-ins like walnuts and raisins for a sweet breakfast treat that’s 100% vegan. We love to eat ours warm with a sprinkle of cinnamon on top.

Carrot Cake Smoothie

We’ll never say no to a smoothie, especially one that’s made to taste like dessert. This recipe by Foxes Love Lemons is a filling option with plenty of fiber from walnuts and two whole carrots. Vanilla Greek yogurt and a touch of honey round it out with some sweetness, while traditional carrot cake spices like cinnamon and nutmeg add a bit of warmth.
