Fresh herbs bring color, flavor, and freshness to any dish. However, when your recipe just calls for a handful, you might be left with a huge bundle of leaves without many ideas of what to do with them.

Here are a few ways to use up fresh herbs and avoid throwing away any more green goodness!

Make Herb Oil

Herb oil is great because you can use all sorts of combinations of soft herbs to use EVERYTHING up and get super fresh, verdant flavors. Simply blanche your herbs for a few seconds before submerging in ice water, blend them with olive oil and then sieve the mixture through a muslin cloth over a few hours. You’ll be left with emerald green oil that is delicious, versatile and can be kept for a week or two.

Make Pesto, Zhug, Salsa, or Chimichurri

Most cuisines have some kind of chopped or blended herby dip that can add fresh flavor and spice to any dish. Experiment with homemade pesto, Middle Eastern zhug, Mexican salsa, or Argentinian chimichurri and travel the world with your herby leftovers!

Make a Kuku Sabzi (Persian Herb Fritatta)

This delicious Persian recipe is for when you have TONs of herbs crying out to be used up (we’re talking pounds!). Kuku sabzi is packed with green goodness and, when topped with walnuts and cranberries, makes a beautiful dinner party center-piece.

Freeze Them

If you don’t have the energy to transform your herbs into something delicious, you can simply freeze them for future use. Washed, chopped herbs can be frozen in ice cubes to add fresh color and flavor to soups, stews and sauces.

This will guarantee that you’re starting with something flavorful, and any seasonings can simply enhance the taste. Here are some ways we know how to choose fresh and delicious fruits and veggies.

Shop Local

Heading to your local farmers’ market is a great way to ensure you’re choosing good produce. The food won’t have had to travel so far, so you know it’s going to be fresh. You can also ask the farmers questions about how the food was grown.

Go By Smell

Our senses of smell and taste are closely linked, so choosing fruits and vegetables that are especially fragrant is likely to ensure that you’ll end up with produce that has a nice flavor.

Look For Color

Fruits and veggies that are bright and vibrantly colored are likely the freshest. As soon as produce starts to rot, spots will appear, or its color will turn slightly brownish.

Whether for a light meal or a healthy snack, Thai spring rolls are a great way to add freshness to your diet. There are lots of yummy vegetables you can add, some more common than others. Here are some fresh and some cooked options to try out.

Fresh

For fresh vegetables, the most common found in spring rolls are shredded cabbage, shredded carrots, and cilantro. For some added crispness, try adding thinly-sliced cucumber, sliced bell pepper, and a few mint leaves. For a kick, slice some red onions or even a bit of jalapeno if you like spice. Or, take your inspiration from tacos and pickle the red onions to add extra flavor.

Cooked

You can really add any cooked vegetable you like to a spring roll, but it’s a good idea to pay attention to what can most easily be cut into strips. Remember that you will have to roll the filling into a rice paper later, so you want to make that process as easy as possible. Some great vegetables to try frying up with spices are cabbage (again, yes) and sweet potato.

These can both be cut into strips, so they are great from a flavor and a structural standpoint. Try seasoning the cabbage with sesame oil, chili oil, and soy sauce and frying it up. Sweet potato goes nicely with warmer, sweeter spices, so try seasoning with ginger and turmeric before cooking in a pan or in the oven.

Ceviche is a cold, delicious appetizer, made from fresh fish and originating from South America. It’s without a doubt one of the most refreshing fish dishes out there, both in taste and appearance, and it’s also a super easy dish to make at home.

Ingredients (4 servings)

  • 6 of clean fillets (without skin and bones) of any fresh fish
  • 3 tablespoons of chopped red onion
  • 1 tablespoon of chopped hot green pepper
  • 2 tablespoons of chopped sweet red pepper
  • 1 chopped garlic clove
  • 1 tablespoon salt
  • Juice from 3 lime (or 2 lemons)
  • 1/4 olive oil
  • 3 tablespoons of finely chopped coriander

Preparation

Mix the chopped vegetables in a large mixing bowl. Cut the fish fillets into small cubes, and add to the bowl with the vegetables. Add lime juice (or lemon juice) and salt, and mix. At this point, the color of the fish will change, and it should become white-transparent. Add olive oil and the chopped coriander. Mix well, cover, and refrigerate for 20 minutes.

The ceviche is served in a clear serving bowl or on a plate of china. It’s ideal for an appetizer, but it can also be quite enjoyable as a side dish!
