This vegetarian recipe is warming, hearty, and filling. Inspired by rustic Spanish flavors, this hearty chard and chickpea stew is packed with protein, fiber, and other essential nutrients. It makes a fantastic easy dinner for two or could be served as a side alongside other tapas dishes.

The chard can be subbed for other cooking greens such as kale, spinach, or collard greens.

Ingredients:

  • 1 white onion, finely chopped
  • 2 tablespoons extra virgin olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili flakes
  • 1 can chickpeas, drained and rinsed
  • 1 large bunch chard, thoroughly washed and roughly chopped
  • 1 cup veggie stock
  • Zest of 1 lemon
  • More olive oil to finish
  • Greek yogurt & toasted sourdough, to serve.

Instructions:

  1. Warm a large sauté pan over a medium heat. Add 2 tablespoons olive oil and the onion. Fry for 10-12 minutes until the onion is soft and translucent.
  2. Add the garlic, paprika, and chili flakes and fry for a few more minutes, taking care that the garlic doesn’t burn.
  3. Add the chickpeas, chard, and veggie stock and pop the lid on the pan. Leave to simmer for around 15 minutes until the chard is wilted and the chickpeas are soft.
  4. Turn off the heat and add the lemon zest and then another swirl of olive oil.
  5. Serve with a dollop of Greek yogurt and thick piece of sourdough toast.
  6. Enjoy!

Here are three iconic dishes from different cultures that use chickpeas as their main ingredient.

India: Channa Masala

Channa masala is a classic dish in India and especially in Indian restaurants outside of India. Masala as westerners know it often refers to a spiced tomato-based sauce while “channa” means chickpea. The dish can be served over rice or with naan as well as raita (a yogurt sauce) and chutneys.

The Middle East: Hummus

You’ve probably heard of hummus, as you can find a packaged version of it in most grocery stores. It’s made of chickpeas, tahini, olive oil, lemon, and salt, all blended together until smooth and topped with spices and olive oil, eaten on pita. What you may not know is that in areas where it’s a staple, fresh hummus is often served warm with roasted or fried veggies, meat, or a hard-boiled egg on top.

Morocco: Harira

Harira is a flavorful stew made with chickpeas as well as other legumes like lentils. It’s traditionally made with a tomato-and-lamb-based broth, and served to break the Ramadan fast.

This chickpea and chorizo stew is filling, hearty, and satisfying, and is a fantastic way to enjoy rich, meaty flavors, without using too much actual meat. You can serve it as part of a tapas feast, or simply with toast on the side for an easy weeknight dinner!

Buy the best chickpeas you can find to really take this dish to the next level – jarred varieties are usually more tasty than canned.

Ingredients:

  • 1/2 cup chorizo, roughly sliced
  • 1 tablespoon olive oil
  • 1 large white onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon cumin
  • 1 tablespoon tomato paste
  • 1 can chickpeas, drained and rinsed
  • 1 can chopped tomatoes
  • 1 veggie stock cube
  • Juice of 1/2 a lemon
  • 1 handful flat leaf parsley, finely chopped

Instructions:

  1. Heat a large sauté pan with a lid over a medium heat.
  2. Add the chorizo and cook until it begins to brown and sizzle.
  3. Add the olive oil along with the onion and cook for 8-10 minutes until it is soft and translucent.
  4. Add the paprika, cayenne pepper, cumin and garlic and cook for a couple more minutes until aromatic. Add a splash of water if the spices begin to stick.
  5. Next, add the tomato paste and stir well, before adding the chickpeas, tomatoes and stock cube.
  6. Bring to the boil, and then turn down to a low simmer. Pop the lid on and cook for a further 20 minutes, stirring occasionally. You can add more water as needed.
  7. Once the stew is cooked to your preferred consistency, season to taste with salt and pepper and then top with the lemon juice and parsley.
  8. Serve with a dollop of plain yogurt and some toasted sourdough drizzled with olive oil.
  9. Enjoy!

Chickpeas, also known as garbanzo beans, are a legume native to the Mediterranean. They’re a dietary staple in many places throughout the Middle East, Africa, and parts of Europe. There are countless ways to prepare them, but this quick and easy salad is one of our favorites. It’s inspired by a sidedish sometimes served in Spain, and it’s full of protein and fiber. The beans are sure to keep you satisfied while paprika adds a bit of smokiness. The olives round everything out with a nice salty bite. Throw in any vegetables you may have on hand if you like, though the recipe certainly stands up on its own. If you’re searching for a filling yet healthy lunch that you can prepare with minimal effort, look no further. 

Ingredients:

  • One 14 oz. can of whole chickpeas 
  • 1 tablespoon of extra-virgin olive oil
  • 1 tablespoon of fresh-squeezed lemon juice
  • ¼ teaspoon of salt
  • ¼ teaspoon of cracked black pepper 
  • ½ teaspoon of smoked paprika
  • ⅓ to ½ cup pitted green olives

Instructions:

  • Drain chickpeas through a colander over the sink. (Chickpea water can also be used as a plant-based egg substitute. If you’d like to retain it, drain the chickpeas over an open jar or container that can be sealed airtight. Store in the fridge for up to a week.)
  • Transfer chickpeas to a medium bowl and add the olives
  • Drizzle with olive oil and lemon juice
  • Sprinkle with salt, pepper, and paprika
  • Using a spoon, gently mix salad until chickpeas and olives are evenly coated
  • Enjoy!

Hummus is one of those foods that just add so much to life, because it’s delicious, vegan friendly, and very filling. You can buy it in the supermarket very easily, but nothing compares to warm, homemade hummus. Here’s an awesome hummus recipe that we just love!

Recipe

  • 1 cup dried chickpeas
  • 1/4 cup tahini
  • 3 Tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 3 Tablespoons pine nuts
  • 2 lemons

Directions

  • Soak the chickpeas in a bowl of cold water overnight. Best to leave it in the fridge.
  • Drain the chickpeas and rinse them under cold water. Pour the chickpeas into a large pot, and fill it with water. The water level should be about two inches above the chickpeas. Place on a flame until boiling. Let it simmer for about an hour. The chickpeas should be soft, with the skin peeling off of them.
  • Drain, reserving 18 tablespoons of the cooking liquid and 4 tablespoons of the chickpeas which will be added on top later. Rinse the chickpeas under cold water.
  • Pour the chickpeas into a food processor. Squeeze the lemons into the mix. Add the tahini, salt, and cumin. You can add any other flavors you think would work well here. Add about 4 ounces of the reserved cooking water. You control the consistency of the hummus by the amount of water you add now. Better to start with less, and add if you want it thinner. 
  • Stir fry the pine nuts in olive oil in a separate pan. Fry until brown. 
  • If you are storing it for later use, place the hummus in a container and make a large indentation in the center. Drizzle the olive oil and pine nuts over the hummus.
  • If you’re serving right away, place on a plate with the same sort of indentation, with the olive oil and pine nuts over the surface.
  • Serve with warm pita bread.

This chickpea and chorizo stew is filling, hearty, and satisfying, and is a fantastic way to enjoy rich, meaty flavors, without using too much actual meat. You can serve it as part of a tapas feast, or simply with toast on the side for an easy weeknight dinner!

Buy the best chickpeas you can find to really take this dish to the next level – jarred varieties are usually more tasty than canned.

Ingredients:

  • 1/2 cup chorizo, roughly sliced
  • 1 tablespoon olive oil
  • 1 large white onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon cumin
  • 1 tablespoon tomato paste
  • 1 can chickpeas, drained and rinsed
  • 1 can chopped tomatoes
  • 1 veggie stock cube
  • Juice of 1/2 a lemon
  • 1 handful flat leaf parsley, finely chopped

Instructions:

  1. Heat a large sauté pan with a lid over a medium heat.
  2. Add the chorizo and cook until it begins to brown and sizzle.
  3. Add the olive oil along with the onion and cook for 8-10 minutes until it is soft and translucent.
  4. Add the paprika, cayenne pepper, cumin and garlic and cook for a couple more minutes until aromatic. Add a splash of water if the spices begin to stick.
  5. Next, add the tomato paste and stir well, before adding the chickpeas, tomatoes and stock cube.
  6. Bring to the boil, and then turn down to a low simmer. Pop the lid on and cook for a further 20 minutes, stirring occasionally. You can add more water as needed.
  7. Once the stew is cooked to your preferred consistency, season to taste with salt and pepper and then top with the lemon juice and parsley.
  8. Serve with a dollop of plain yogurt and some toasted sourdough drizzled with olive oil.
  9. Enjoy!

Chickpeas, also known as garbanzo beans, are a legume native to the Mediterranean. They’re a dietary staple in many places throughout the Middle East, Africa, and parts of Europe. There are countless ways to prepare them, but this quick and easy salad is one of our favorites. It’s inspired by a sidedish sometimes served in Spain, and it’s full of protein and fiber. The beans are sure to keep you satisfied while paprika adds a bit of smokiness. The olives round everything out with a nice salty bite. Throw in any vegetables you may have on hand if you like, though the recipe certainly stands up on its own. If you’re searching for a filling yet healthy lunch that you can prepare with minimal effort, look no further. 

Ingredients:

  • One 14 oz. can of whole chickpeas 
  • 1 tablespoon of extra-virgin olive oil
  • 1 tablespoon of fresh-squeezed lemon juice
  • ¼ teaspoon of salt
  • ¼ teaspoon of cracked black pepper 
  • ½ teaspoon of smoked paprika
  • ⅓ to ½ cup pitted green olives

Instructions:

  • Drain chickpeas through a colander over the sink. (Chickpea water can also be used as a plant-based egg substitute. If you’d like to retain it, drain the chickpeas over an open jar or container that can be sealed airtight. Store in the fridge for up to a week.)
  • Transfer chickpeas to a medium bowl and add the olives
  • Drizzle with olive oil and lemon juice
  • Sprinkle with salt, pepper, and paprika
  • Using a spoon, gently mix salad until chickpeas and olives are evenly coated
  • Enjoy!

Hummus is one of those foods that just add so much to life, because it’s delicious, vegan friendly, and very filling. You can buy it in the supermarket very easily, but nothing compares to warm, homemade hummus. Here’s an awesome hummus recipe that we just love!

Recipe

  • 1 cup dried chickpeas
  • 1/4 cup tahini
  • 3 Tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 3 Tablespoons pine nuts
  • 2 lemons

Directions

  • Soak the chickpeas in a bowl of cold water overnight. Best to leave it in the fridge.
  • Drain the chickpeas and rinse them under cold water. Pour the chickpeas into a large pot, and fill it with water. The water level should be about two inches above the chickpeas. Place on a flame until boiling. Let it simmer for about an hour. The chickpeas should be soft, with the skin peeling off of them.
  • Drain, reserving 18 tablespoons of the cooking liquid and 4 tablespoons of the chickpeas which will be added on top later. Rinse the chickpeas under cold water.
  • Pour the chickpeas into a food processor. Squeeze the lemons into the mix. Add the tahini, salt, and cumin. You can add any other flavors you think would work well here. Add about 4 ounces of the reserved cooking water. You control the consistency of the hummus by the amount of water you add now. Better to start with less, and add if you want it thinner. 
  • Stir fry the pine nuts in olive oil in a separate pan. Fry until brown. 
  • If you are storing it for later use, place the hummus in a container and make a large indentation in the center. Drizzle the olive oil and pine nuts over the hummus.
  • If you’re serving right away, place on a plate with the same sort of indentation, with the olive oil and pine nuts over the surface.
  • Serve with warm pita bread.
