Make These Vegan Chicken Nuggets For Your Meatless Monday

Meatless Monday has been a trend for the past several years and urges meat eaters to go one day without consuming animal products. This is not only good for your health, but it’s also good for the environment, as animal production is one of the reasons that climate change has been so rapidly growing. These vegan chicken nuggets are super delicious and have no animals products in them at all! They are super easy to make and also make for great party snacks or treats to munch on during the game.

Instructions

  1. Put 1/2 cup rolled oats into your food processor to make flour. 
  2. Sauté one small onion until translucent and add that to the food processor, along with 1 teaspoon of garlic powder, paprika, and salt, 1 tablespoon of nutritional yeast, 1/2 teaspoon of mustard, 3 tablespoons of water, and a few cracks of black pepper.
  3. Pulse until it forms a dough-like mixture.
  4. Take a spoon full of the mixture and roll it into balls.
  5. Dip the balls into some unflavored nut milk and then roll the balls into panko breadcrumbs or whichever bread crumbs you have on hand. Put them onto a parchment-lined baking sheet.
  6. Bake at 350F for about 15 until they look golden and crispy minutes and enjoy!
