Nothing beats the umami flavor and satisfying green crunch of broccoli in oyster sauce from your favorite Chinese take-out. But what if you could make this tasty veggie sidedish in the comfort of your own home? Cheap, tasty and oh-so-easy, our homemade version is lower in fat and sodium and ready in under thirty minutes!
Ingredients:
- 1 small head fresh broccoli, broken into florets
- 1 onion, finely sliced
- 3 cloves garlic, minced
- 2 tablespoons of oyster sauce (or vegan alternative)
- 1 tablespoon soy sauce
- 2 tablespoons toasted sesame oil
- 2 teaspoons sugar
- 3 teaspoons corn-starch
- 2 tablespoons of water
Instructions:
- Stir-fry the onion in a neutral oil for 5 minutes in a large frying pan.
- Add the minced garlic and fry for a further 30 seconds until fragrant.
- Add the broccoli florets.
- In a small bowl, mix together the oyster sauce, soy sauce, toasted sesame oil and sugar until combined.
- Add to the broccoli and stir until the veggies are coated.
- In the same small bowl, add the corn-starch and water and mix into a slurry.
- Add the cornstarch slurry to the main pan and stir until the sauce is thickened.
- Add water as needed and cook until the broccoli is cooked through but still maintains a crunch.
- Serve with sticky rice and a fried egg as a main meal, or as a side dish with your other Chinese takeout-style favorites!
