This crunchy cabbage salad is full of fresh flavors which balance well with the bittersweet nutty caraway seeds. It’s the perfect healthy side dish to pair with a grilled cheese, BBQ, grilled fish, and more.
Ingredients:
- 1 small white cabbage
- 1 small white onion
- 2 teaspoons caraway seeds
- 2 teaspoons sugar
- 1 teaspoon salt
- ¼ cup white vinegar
- ¼ cup lemon juice
- 2 tablespoons canola oil
Instructions:
- Finely chop the cabbage and onion into thin strips using a mandoline slicer or a sharp knife and put in a large salad bowl. Toss to combine.
- Warm a small dry frying pan over a medium heat and toast the caraway seeds for a couple of minutes until the aromas are released and they start to pop.
- Make the dressing. Combine the canola oil, salt, sugar, lemon juice, and vinegar in a jar. Screw the lid on tightly and give it a good shake.
- Add the dressing and caraway seeds to the cabbage and mix well to combine.
- This salad gets better with time so be sure to dress it at least 20 minutes before serving. It can be kept in an airtight container in the refrigerator for a few days.
