Ingredients:
- 6-8 medium-sized washed potatoes
- 2 tablespoons rosemary
- 4 thyme branches
- Stick butter or 5 tablespoons olive oil
- 1/2 teaspoon smoked paprika
- Salt and ground black pepper
Instructions:
- Cook the potatoes whole in boiling salted water, until soft. Drain and dry the potatoes.
- Place the potatoes on a baking pan and mash them lightly so that the potato flesh is exposed through the peel.
- In a separate bowl, mix the melted butter or olive oil with the rosemary and thyme and smoked paprika. Pour the mixture over the potatoes.
- Season with salt and pepper to taste and place in the oven at 350 F for 45 minutes or until the potatoes are golden and crispy at the edges.
