Cultures from all over the world have their own cold soups that they make during summer. Cold soups are a great summer dish because they are light, refreshing, and nutritious. So, it makes sense that they were developed in so many different food traditions. You can make your own easily, with vegetables and herbs. Here are a few from different places to get you started.

Polish Chlodnik

Chlodnik is a beet soup traditionally eaten in Poland. It is made creamy with sour cream and yogurt, and refreshing with cucumbers and dill. You can make it by simmering chopped and grated beats until tender, then mixing them up with herbs and fresh veggies.

Spanish Gazpacho

A classic dish in Spain, served ice-cold in chilled bowls or glasses, gazpacho is made from blended fresh vegetables. Blend up tomatoes, peppers, cucumbers, onions, garlic, and (importantly) high-quality olive oil, and then garnish with some basil and whatever else you like.

Korean Mul Naengmyeon

Mul naengmyeon is an ice-cold noodle soup served a few different ways depending on the region of Korea. In South Korea it is sweet and tangy flavored, using beef broth and chewy noodles.
