A Healthier Take on Classic Rice Krispie Treats

Rice Krispie Treats are a childhood favorite but they’re not exactly nutritious. Typically made with ingredients like marshmallows and lots of butter, their high sugar content can spike your blood sugar and end up leaving you with a crash. We still love Rice Krispie Treats, so we created a healthier version. This recipe is made with maple syrup, which has a lower glycemic index than glucose sugar syrup, natural peanut butter, and protein powder for a delicious treat that’s sure to keep you full and satisfied.

Ingredients

  • 3 cups puffed brown rice cereal
  • ⅓ cup maple syrup
  • ⅓ cup natural peanut butter
  • ¼ cup coconut oil
  • ¼ cup vanilla protein powder
  • ¼ teaspoon salt

Instructions

  • Line an 8×8 baking pan with parchment paper and set aside.
  • Add rice cereal and protein powder to a large bowl and mix until protein is evenly distributed
  • In a small saucepan stir maple syrup, peanut butter, and coconut oil until just combined (the oil should be liquid with no clumps)
  • Remove peanut butter mixture from heat and pour over rice cereal, stirring until 
  • Pour mixture into lined baking pan using a rubber spatula to smooth
  • Refrigerate for 30-45 minutes or until bars have solidified
  • Cut bars to desired size and enjoy!
