Your Guide to Cooking a Nutritious Cottage Cheese Alfredo

Are you and your family craving wholesome, creamy pasta at dinnertime but still concerned about limiting your fat intake? Then this scrumptious, high-protein cottage cheese alfredo is sure to hit the spot. Here’s how you can create this traditional pasta dish.

Ingredients:

  • 8 ounces fettuccini
  • 1 cup 2% milk
  • 1 1/4 cups low-fat cottage cheese
  • 1 ounce shredded Parmesan
  • 2 garlic cloves, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon flour
  • 3 tablespoons unsalted butter
  • 3-ounce baby spinach
  • red pepper flakes

Instructions:

  1. Fill a pot with salted water and boil. Add fettuccine and stir occasionally until al dente. Remove the pasta and drain the water into a cup while placing the pasta in a large bowl.
  2. Place cottage cheese, parmesan, butter, flour, garlic, milk, and one teaspoon of salt into a blender. Once blended smooth, place the sauce in a large skillet, cooking over medium heat for about 8 to 10 minutes. Stir continuously until the sauce is thickened. Finally, add spinach and stir until wilted within.
  3. Take the skillet off of the stove and place the pasta inside. Mix the pasta in the sauce until well coated, adding the remaining pasta water if the mixture is too thick. Finally, top with red pepper flakes before serving.
