You Won’t Believe This Cashew Nut Cheese is Vegan!

    This vegan cheese is ready without lots of preparation steps or ingredients and it’s delicious and rich in flavor that will be great on any breakfast table. This cheese tastes amazing on a slice of fresh bread, with tomato and freshly ground pepper and it lasts the refrigerator for up to four days. Here’s the recipe for this cashew nut “cheese.”

    Ingredients:

    • 1 cup natural cashews
    • Water
    • Juice from half a lemon
    • 1 tablespoon extra virgin olive oil
    • Salt to taste

    Optional Toppings:

    • Herbs
    • Garlic, fried onions, or olives

    Instructions:

    1. Soak the cashews in a bowl with plenty of water for 4 to 8 hours, at room temperature.
    2. Strain and rinse the cashews, and put them in a blender.
    3. Add water to about a third of the height of the cashew in a blender, then add the oil and lemon juice, and finally salt. Blend to a smooth texture.
    4. Taste and add salt or lemon to taste.
