You Will Love This One Pot Chickpea Stew!

One pot meals just make everything easier; less clean up, less effort, and just as much flavor. Especially when you’re making vegetarian or vegan food, there can often be a lot of ingredients and steps to follow. Well, luckily there are still many things can make all in one pot, especially this one pot chickpea stew!

Ingredients

The base for this stew is obviously chickpeas, along with tomatoes and sweet potatoes. But really you can throw in whatever vegetables you have on hand, everything tastes great in this dish.

Method

  1. Start by dicing onions, garlic, chilis, and fresh ginger. Add the onions to a pot first for a few minutes until they turn translucent and then add the garlic, chilis, and ginger.
  2. Then, add turmeric, salt, chili pepper, a little curry, coriander, cumin, cloves, and nutmeg. Let the spices cook for a few minutes.
  3. Dice the sweet potatoes into small cubes so they don’t take too long to cook. Throw the in the pot and add a little water a few minutes to steam them.
  4. Pour in either freshly diced tomatoes or canned tomatoes and let everything cook together for at least 20 minutes.
  5. In the last 10 minutes, put in the already cooked chickpeas.
