When it comes to vegan baking, things can be a little bit hit or miss, especially if you’re used to eating cakes, cookies, and desserts made with lots of eggs, butter, and milk. But every once in a while, you find a special recipe that is both plant-based and so delicious that even non-vegans want to find out how you made it. This vegan chocolate cake recipe is one of those, and here is exactly how you make it.

Ingredients

  • 1 cup unsweetened almond milk
  • 1 tablespoon apple cider vinegar
  • 2 cups all purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup canola oil
  • 2/3 cup unsweetened applesauce
  • 1 tablespoon vanilla extract
  • 1 cup boiling water

Directions

Preheat your oven to 350 degrees. Grease and line your cake pan. In a small bowl, combine the unsweetened almond milk and vinegar, setting them aside to curdle.

In a large bowl, combine your dry ingredients (flour, sugar, cocoa powder, baking powder, baking soda, and salt). Add the wet ingredients (oil, applesauce, vanilla, and the curdled almond milk/vinegar combination). Mix on medium speed until well combined.

Next, carefully pour in the boiling water, mixing until the batter is consistent and runny. Pour the batter into your cake pan and bake for 30 – 35 minutes. Let the cake cool completely before frosting or decorating.
