You Have to Try this Oil-Free Vegan Chickpea Salad

As a vegan, you probably know a thing or two about salads. So when you find a salad recipe that is good for you, has plenty of protein, is easy to make, and tastes good, you know it’s a keeper. That’s what you can expect from this Mediterranean-inspired chickpea salad recipe. Try it out: it’ll probably become a new go-to.

Ingredients

  • Tomato
  • Cucumber
  • Red bell pepper
  • Red onion
  • Can of chickpeas
  • Lemon
  • Parsley

Directions

  • Dice up all of the vegetables into small pieces.
  • Drain and rinse the can of chickpeas.
  • Combine diced tomato, cucumber, red bell pepper, and onion in a big bowl. Add chickpeas.
  • In a smaller bowl, combine the juice of a whole lemon with chopped parsley. Stir well.
  • Pour the lemon juice parsley dressing into the salad, tossing to coat nicely.
