You Can’t Go Wrong With This Basic, But Slightly Healthier Mac and Cheese

Everyone loves macaroni and cheese for good reason. Rich pasta with a cheesy sauce is the ultimate comfort food. If you love mac and cheese but feel a little bad about indulging in it, here is a recipe that makes it a little bit lighter but still super flavorful.

Ingredients

For this recipe, you will need butter, non-dairy milk, flour, cheese, pasta, and a vegetable of your choice. This recipe uses frozen peas, but you can use whatever you have on hand.

Instructions

  1. Put water in a pot and bring it to boil. Put a whole box of pasta in once it’s boiled.
  2. Start melting 1/4 cup of butter in a pan over medium-high heat.
  3. Once it’s melted, slowly add in 1/4 cup of flour and whisk it into the butter to make a roux.
  4. Cook the roux for a couple of minutes and then add in 2 cups of non-dairy milk and whisk all the while.
  5. Cook for about 5-10 minutes and then put the heat down to low. Add in 2 cups of your favorite cheese and stir well.
  6. Strain your pasta and put it right into the pan with the cheese sauce.
  7. Add in some defrosted frozen peas or whatever vegetable you want and serve!
