Yep, You Can Make Vegan “Fried Chicken”

As a vegan, there are certain foods that you’re just used to missing out on. And you tend to be okay with it. But if parting with fried chicken has been hard for you, don’t worry. It’s totally possible to cook vegan fried “chicken” at home, and it’s absolutely delicious. Eat it on its own or, even better, as part of a chicken sandwich with a soft bun, some pickles, and a vegan mayo or aioli. Here’s how.

Ingredients

  • Oyster mushrooms
  • Vegetable oil
  • Your choice of vegetable milk
  • Lemon juice
  • Flour
  • Baking powder
  • Sugar
  • Paprika
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper

Directions

Combine the plant milk and lemon juice in a large bowl. Combine the dry ingredients (flour, baking powder, sugar, paprika, garlic powder, onion powder, salt, and pepper) in a separate bowl. Heat vegetable oil in a saucepan to 350 degrees Fahrenheit. Make sure the pot is at least a few inches deep.

Brush dirt off the oyster mushrooms, or wash them and thoroughly pat them dry. Dip the mushrooms in the wet ingredients, then the dry ingredients, tossing to coat. Carefully place them in the hot oil, making sure not to overcrowd in the pot. Let them cook for two to four minutes, or until golden brown.

Remove the mushrooms from the oil with a slotted spoon and place them on paper towels to soak up any excess oil. Repeat until you’ve cooked all the mushrooms. While they’re still hot, sprinkle with salt and serve.
