What is a Butter Board?

You will have heard of cheese boards, and have probably sampled a few before – but a new dairy-based trend is taking over dinner parties. Rather than putting out a spread of different cheeses and crackers, some hosts are spreading the board with artisanal butter, and providing guests with crackers and other nibbles to dip into the butter. If you’d like to give it a go, try one of these three flavor suggestions.

Black Pepper and Chives

Ingredients:

  • 1 1/2 cups of good-quality butter
  • 2 teaspoons ground black pepper
  • 1/5 cup of chopped chives

Instructions:

Let the butter come to room temperature. Spread it over the board, trying to keep it even. Sprinkle the chives and black pepper over the butter, and serve alongside sliced carrots, cucumber, and crackers.

Lemon, Honey, and Smoked Salt

Ingredients:

  • 1 1/2 cups of good-quality butter
  • Zest of 1 lemon
  • 2 tablespoons honey
  • 1 teaspoon smoked salt

Instructions:

Mix the butter with the honey, then spread over a board. Sprinkle over the lemon zest and the smoked salt, and serve alongside smoked fish and beetroot slices.

Cherry, Feta, Dill, and Thyme

Ingredients:

  • 1 1/2 cups of good-quality butter
  • 1/2 cup of pitted cherries
  • 1 tbsp red wine vinegar
  • 1/2 cup of feta
  • Handful of fresh dill and thyme

Instructions:

Cook the cherries with the vinegar, until they have released a lot of their liquid. Strain this off into a bowl (remember to reserve it). Mix the cherries, cubed feta, and sliced herbs with the butter. Spread over a board, and drizzle the cherry juice over the top.
