We Can’t Stop Eating These Anzac Cookies

Oatmeal is great for more than just breakfast. Case in point—it’s fabulous in these cookies. Known as Anzac biscuits, they were originally made to send to the Australian and New Zealand Army Corps serving in Gallipoli. These cookies are famously eaten on Anzac Day on April 25 to remember soldiers who died in previous conflicts, but you can enjoy them all year round.

Ingredients:

  • 1/3 cup oats
  • 1/3 cup desiccated coconut
  • 1 cup plain flour
  • 1 cup caster sugar
  • 1 cup butter, plus extra butter for greasing
  • 1 tablespoon golden syrup
  • 1 teaspoon bicarbonate of soda

Instructions:

  1. Heat oven to 360°F. 
  2. Put the oats, coconut, flour, and sugar in a bowl. Melt the butter in a small pan and stir in the golden syrup. Add the bicarbonate of soda to 2 tablespoons boiling water, then stir into the golden syrup and butter mixture.
  3. Make a well in the middle of the dry ingredients and pour in the butter and golden syrup mixture. Stir gently to incorporate the dry ingredients.
  4. Place spoonfuls of the batter on to the buttered baking sheets around 1-inch apart to allow space for spreading. 
  5. Bake in batches for 8-10 minutes until golden. When done, transfer to a wire rack to cool.
