Warm Mushroom Soup You’ll Want to Make Every Day

Who doesn’t love mushroom soup? It’s warm, creamy and amazingly delicious. The following recipe is one that we recommend to all mushroom lovers given that it is one of the easiest recipes to make out there with a guaranteed perfect result. It does, however, take more than an hour to cook, but rest assured the prep is only five minutes long.

Ingredients

To make the delicious mushroom soup make sure that you have 12 oz button mushrooms, 1 spring flat parsley, 6 tablespoons butter, 4 cups chicken stock or broth, 1 small onion, freshly ground black pepper, 2 oz sherry. The onions should be sliced into thin pieces and the sherry should be high-quality.

Instructions

Get a saucepan and add 2 tablespoons of butter and the onion slices. Let it cook on medium heat until the onion is softer. This is when you should pour the rest of the butter and the mushrooms. Cook for about 8 minutes and mix everything often. Include the chicken broth or stock and the parsley as well. Let the soup boil and lower the heat. Let it simmer for an hour.

After that time you should remove the parsley. You can now pour the soup in a food processor and blend it so that it gets an even texture. Add salt and pepper to your wish together with the sherry. If you want to have it boiling hot, just heat it up again.
