It’s always hard to get kids eat their vegetables, so this delicious veggie pizza is a great way to trick them!
Ingredients
- 1 pound pizza dough
- 1 cup whole-milk ricotta cheese
- 4 teaspoons basil pesto
- All-purpose flour, for dusting
- 2 teaspoons olive oil
- 1 cup broccoli florets, chopped
- 1 large peeled carrot
- 8 ounces cherry tomatoes
- ½ cup diced red onion (from ½ small red onion)
- 1 medium diced red bell pepper
- ½ cup shredded part-skim mozzarella cheese (2 ounces)
- ½ cup grated Parmesan cheese (1 ½ ounces)
Instructions
Mix the ricotta cheese and pesto. Stretch out the dough to match the size of the pan and put it on a baking sheet that was previously heated at 4500C. If the dough is sticky, you can add a little bit of flour. Put oil on the dough using a brush, then add an even layer of the mix of ricotta and pesto. Leave a border of about ½ inch. Put the broccoli, carrots, tomatoes, onion and bell pepper on the pizza in this order. Then cover the veggies with mozzarella and parmesan. Bake for about 15-17 minutes, or until the edges get a golden brown color.
