Over the last few years, a widespread increase in plant-based eating has led both big brands and food bloggers to invest plenty of time and energy toward developing vegan burgers that are as good as the real thing. While we love a Beyond Burger, we also can’t deny that they’re quite highly processed, and sometimes we prefer to make our own. “Veggie” usually just means free of animal products, but this recipe by Love and Lemons swaps meat for actual veggies. Whole carrots are gently steamed before marinating overnight in a mixture of apple cider vinegar and tamari.
