Use Up Winter Veggies in This Zingy Salad

If you receive a weekly veg box delivery, or just love stocking up on tasty seasonal veg, chances are there’ll be times when you just can’t think of another recipe to use up your veggies. This fresh, crunchy and zingy salad is the perfect way to use up root veggies and other winter produce.

Ingredients:

For the Salad:

  • Play around with a combination of radishes, kohlrabi, beetroot, carrots, cabbage and kale—use whatever needs using up!
  • 3 green onions, finely sliced on the diagonal
  • 1/4 cup of toasted sesame seeds

For the Dressing:

  • Juice of 1 lemon
  • 2 tablespoons neutral oil, such as canola oil
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons sugar
  • 1/2 teaspoon salt

Instructions:

  1. Wash and peel all your root veggies thoroughly. Chop them into very fine slices, or use a mandoline slicer.
  2. If you are using greens, wash thoroughly and shred or slice into small pieces. Remove the tough stalks of kale.
  3. Combine all the veggies in a large bowl and add the green onion and sesame seeds. Mix well.
  4. Make the dressing. Combine all ingredients in a clean jar and give it a good shake.
  5. Pour the dressing over the salad and mix well so everything is coated.
  6. This salad will benefit from sitting awhile to allow all the flavors to combine.
  7. Enjoy as a side dish with grilled fish, grilled meats or warming vegetable and pulse dishes.
