Tzatziki, The Delicious Sauce That Goes With Everything

    Tzatziki is a Greek sauce that goes well with almost anything, from meat to chips. Light enough to be used in summer days, this sauce can also go very well with salads. Traditionally, Greeks use it in pita gyro, but you can combine it with different kinds of meat. It is also fantastic as a sauce for snacks when you have guests over, as a salad dressing, over baked potatoes or even in burgers and wraps! Made out of simple ingredients, this sauce is easy to prepare and soon will become your favorite.  

    Ingredients

    • 2 cups grated cucumber  
    • 2 cups plain Greek yogurt 
    • 2 tablespoons extra-virgin olive oil 
    • 1 to 2 medium cloves garlic, minced 
    • 2 tablespoons fresh squeezed lemon juice  
    • 2 to 3 tablespoons chopped fresh mint  
    • Salt and fresh ground black pepper 

    Instructions

    Start by taking out the seeds of the cucumber by cutting it in half and using a spoon to scrape them out. Grate the cucumber and add ¼ of a spoonful of salt and let it sit for 5 minutes. Mix together the cucumber with yogurt, olive oil, garlic lemon juice, herbs, another pinch of salt and pepper in a medium sized bowl. Let it stay for 10 minutes before serving.
