Two Cauliflower For The Best Healthy Tots You Ever Tasted

Cauliflower is usually a hit or a miss. It’s one of least “vegetable tasting” veggies, but if not cooked properly they can be on the level of Brussels sprouts. These cauliflower tot recipes will transform the healthy vegetable into something even your kids will love!

Cauliflower Tots (A Healthy Tater Tot)

Ingredients:

  • 3 cups shredded cauliflower 
  • 1 cup shredded sharp cheddar cheese
  • 1 egg
  • 1/4 cup cornmeal or ground oats
  • 1 tsp kosher salt
  • a few grinds black pepper
  • 1/2 tsp ground mustard

Directions:

  1. Preheat oven to 400 degrees.
  2. Spray a mini cupcake tin with oil.
  3. Shred cauliflower and combine all ingredients into a bowl and mix.
  4. Press the mixture into each tin, packing the ingredients in.
  5. Bake for 15 to 20 minutes, or until golden brown.

Buffalo Cauliflower Tots

Ingredients:

  • 4 cups shredded cauliflower
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup hot sauce
  • 1 egg
  • 1/2 cup cornmeal
  • Blue cheese or ranch dipping sauce (optional)

Directions:

  1. Preheat oven to 400 degrees.
  2. Spray a mini cupcake tin with oil.
  3. Shred cauliflower and combine all ingredients into a bowl and mix (except optional dipping sauce).
  4. Press the mixture into each tin, packing the ingredients in.
  5. Bake for 20 to 25 minutes, or until golden brown.
  6. Serve with dipping sauce.
