Calling all Twix lovers with dietary restrictions! We have a special treat for you. In this recipe, we’re going to show you how to make your very own vegan and gluten-free Twix bars. Get ready to indulge in the irresistible combination of caramel, chocolate, and a buttery cookie base—all without any animal products or gluten.

Ingredients:

For the cookie base:

  • 1 cup gluten-free flour blend
  • 1/4 cup almond flour
  • 1/4 cup coconut sugar
  • 1/4 teaspoon salt
  • 1/2 cup vegan butter, softened
  • 1 teaspoon vanilla extract

For the caramel layer:

  • 1 cup dates, pitted and soaked in hot water for 10 minutes
  • 2 tablespoons almond butter
  • 2 tablespoons maple syrup
  • 1/4 teaspoon salt

For the chocolate coating:

  • 1 cup vegan chocolate chips
  • 1 tablespoon coconut oil

Instructions:

  • Prepare the cookie base: In a mixing bowl, combine the gluten-free flour blend, almond flour, coconut sugar, and salt. Add the softened vegan butter and vanilla extract. Mix until a dough forms. Press the dough into a parchment-lined baking pan, creating an even layer. Bake at 350°F (175°C) for 12-15 minutes, or until golden brown. Let the cookie base cool completely.
  • Make the caramel layer: Drain the soaked dates and transfer them to a food processor. Add almond butter, maple syrup, and salt. Process until smooth and creamy. Spread the caramel mixture evenly over the cooled cookie base.
  • Create the chocolate coating: In a microwave-safe bowl, combine the vegan chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
  • Coat the bars: Pour the melted chocolate over the caramel layer, ensuring it covers the entire surface. Use a spatula to spread it evenly. Place the pan in the refrigerator for at least 1 hour, or until the chocolate is set.
