Whether you’re planning on having an English-style cooked breakfast, or are thinking of a hearty sausages and mash dinner, the humble sausage can really make or break a meal. If you’d prefer not to eat meat, this simple recipe for tasty vegan sausages wins every time.
Ingredients (to make 12):
- 1 tin of lentils
- 1 tin of chickpeas
- 2 red onions
- 1 carrot
- 1 stock cube
- 2 tablespoons of pinhead oatmeal
- 1 tablespoon of coconut oil
- 2 tablespoons of vegetable oil
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1 teaspoon of smoked paprika
- 1 tablespoon of tomato puree
Instructions:
- Finely slice the onions and fry them over a medium heat in the vegetable oil.
- As they start to brown, add the salt, pepper and smoked paprika. Stir through well.
- Add the drained lentils and chickpeas.
- Boil some water and then stir 1/2 cup of boiling water with the stock cube and oatmeal added.
- Add the stock cube, oatmeal and water to the pan. Stir well.
- Add the tomato purée and coconut oil. Let the mixture cook until most of the liquid has reduced, then remove from the heat.
- Once the mix has cooled, heat the remaining oil in a pan. Shape the mix into sausages and fry one each side until cooked through.
