Ingredients

  • 1 cup of split yellow peas, rinsed and drained
  • 1 onion, finely chopped
  • 2 cups of vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Butter (optional, for serving)

Instructions

  1. In a large saucepan, combine the split yellow peas, chopped onion, vegetable broth, bay leaf, and dried thyme.
  2. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer, covered, for 45-60 minutes, or until the peas are tender and have absorbed most of the liquid. Stir occasionally to prevent sticking.
  3. Once the peas are cooked and softened, remove the bay leaf from the saucepan.
  4. Using a potato masher or immersion blender, mash or blend the cooked peas and onions until smooth and creamy. If the mixture is too thick, you can add a little more vegetable broth or water to achieve your desired consistency.
  5. Season the pease pudding with salt and pepper to taste, adjusting the seasoning as needed.
  6. Transfer the pease pudding to a serving bowl and serve hot, accompanied by a knob of butter if desired.
