Try Megan Boswell’s Easy Recipe for Roasted Spring Onion And Potato Frittata

Frittata is a tasty and versatile meal that can literally save you when you have no idea what to prepare and don’t have too much time to cook either. If you have some vegetables, eggs and cheese in the fridge, you can prepare a delicious frittata in about 20 minutes. It’s that easy.

Check out this easy recipe for roasted spring onion and potato frittata shared by Megan Boswell from The Healthy Label. Don’t forget you can choose other vegetables as well—and Megan suggested zucchini, capsicum or grated carrot.

Ingredients

  • 6 stalks spring onion
  • 4 medium potatoes
  • 3 tbsp extra virgin olive oil
  • 2 tsp Italian seasoning
  • 1 tsp each salt, pepper & garlic powder
  • 11 eggs
  • 1/4 cup water
  • cheddar cheese (optional)

Instructions

  1. Prepare a tray with baking paper.
  2. Preheat oven to 200 C (400 F).
  3. In a medium bowl, toss together half the onion, potatoes, 3/4 of the oil, the Italian seasoning and 3/4 of the salt.
  4. Bake this for around 30 minutes.
  5. In the meantime, mix together eggs, water, salt, pepper and garlic powder together.
  6. Place the cooked potatoes on the tray, pour with egg mixture. Top with cheddar cheese if you want and bake your frittata for around 25-30 minutes.
