Tomato Tales: Check out this Flavorful Bruschetta Recipe

Bruschetta is an Italian dish that is comprised of tomatoes, fresh herbs, and sometimes roasted red peppers. Although it Italy you won’t often find one with peppers, they do give a great depth of flavor to the spread. It is a really fresh, healthy, and vegan dish, perfect for a snack or used as an appetizer!

Ingredients

The main ingredient for this recipe is tomatoes. Get as fresh as you can because they are the total star of the dish. The other ingredients include garlic, olive oil, basil, and balsamic vinegar.

Method

  1. If you’re using red peppers, first go ahead and cut them in half, deseed them, and roast them in the oven until the skin starts to burn. Put them in a bowl with plastic wrap so it steams and loosens the skin. Peel the skin off and chop into small pieces.
  2. Dice the tomatoes and add them to a bowl with garlic, fresh basil, olive oil, balsamic, salt, and pepper.
  3. Let this sit together in the fridge for a couple of hours to marinate the flavors.
  4. Drain the juices and serve on top of crostini with extra basil and a final bit of salt.
