Any baker will tell you that it’s always better to measure baking ingredients, both wet and dry, using weight rather than volume. Unlike cooking, where you can be nonchalant with measurements, baking relies on chemistry processes and requires precision.
Now, weighing ingredients is a pretty straightforward process. You place a bowl or a cup on a scale, tare the scale to exclude the weight of the container from the equation, and then add ingredients until they reach the required mass. But if there was a better way? A way that gets the job done a little faster and with fewer dirty dishes?
Reverse Taring
It turns out that there is a way to simplify measuring ingredients. The process is called reverse taring and is so painfully simple that you will wonder how no one told you about it before.
Ana Calderone, the associate food editor at People magazine, recently brought to light this new technique in a TikTok video that racked up almost a million views in less than two weeks. According to her, reverse taring is so efficient that she uses it exclusively since she found out about it. Here is how you do it.
To measure an ingredient using a scale, just put the whole ingredient on the scale in its package. Then tare the scale, so it shows zero. Scoop out the ingredient directly into the mixing bowl until you hit the negative of the required amount.
For example, you need 100 grams of flour and have a 1-kilogram flour bag. Place the bag on the scale and scoop out until the scale shows -900 grams. Simple as that.
