Three Ways to Use Peanut Butter

Peanut butter is one of those savior ingredients, which can turn an OK meal into something really memorable. It has many uses in both savory and sweet dishes, so if you’ve got some that needs using (or if you just really fancy a peanut-infused feast) check out these three recipes.

Peanut and Vegetable Stew

Ingredients:

  • 2 tablespoons peanut butter
  • 2 teaspoons butter
  • 2 carrots
  • 1 leek
  • 1 onion
  • 2 cloves of garlic
  • 2 sticks of celery
  • 1 cup of potatoes
  • 1/2 cup of red wine
  • 1 cup of mushroom stock

Instructions:

  1. Melt the butter in a pan. Slice the vegetables into small chunks, and add these to the pan.
  2. After 10 minutes, add the red wine and mushroom stock.
  3. Reduce to a simmer and cook for half an hour.
  4. Add the peanut butter, stir through well, season with salt and pepper, and serve.

Peanut Butter Mac and Cheese

Ingredients:

  • 1 cup of dried pasta
  • 1 cup of shredded cheese
  • 1/2 cup of milk
  • 1 teaspoon mustard
  • 1 teaspoon smoked paprika
  • 1 onion
  • 1 leek
  • 2 tablespoons peanut butter
  • 1 tablespoon butter

Instructions:

  1. Heat the butter in a pan. Finely slice the leek and onion, and add to the pan.
  2. Cook for 10 minutes, until softened.
  3. Add the mustard and smoked paprika, add the milk and stir through.
  4. Cook for 5 minutes, add the peanut butter and cheese, and stir through until both are melted.
  5. Remove from the heat.
  6. Cook the pasta according to packet instructions, stir through the sauce, then bake in an oven on medium heat for 25 minutes.

Peanut Butter Frosting

Ingredients:

  • 1 cup of icing sugar
  • 1/4 cup of butter
  • 1/4 cup of peanut butter
  • 3 tbsp water

Instructions:

  1. Cream the butter and icing sugar together, then add the peanut butter.
  2. Stir through until a smooth consistency is achieved, add a little water to loosen the mix if needed.
  3. Use to frost a chocolate cake or a peanut butter cake.
