3 Ways to Make a Tomato Sauce

Tomato sauce is the base of so many recipes, so you need to have a good recipe for one up your sleeve. Here are three, one using fresh tomatoes, and the others using tinned.

Fresh Tomato Sauce

Ingredients (to make 1 cup):

  • 1 cup of fresh tomatoes
  • 1 tablespoon of fresh basil
  • 3 tablespoons of olive oil
  • 3 cloves of garlic
  • 1 tablespoon of red wine vinegar
  • 2 tablespoons of tomato puree

Instructions:

  1. Blanch the tomatoes in boiling water, once the water has cooled peel the skins from the tomatoes.
  2. Heat the oil in the pan, add the sliced garlic and peeled tomatoes.
  3. Add the vinegar and puree to the pan and cook for another 30 minutes stirring regularly.
  4. At the end of the cooking time, add the basil to the pan and stir through.

Tinned Tomato Sauce With Milk

Ingredients (to make 1 cup):

  • 1 tin of tomatoes
  • 1/2 cup of milk
  • 1 onion
  • 3 tablespoons of butter
  • Salt and pepper

Instructions:

  1. Heat the butter in a pan.
  2. Slice the onion in half, set each half down in the butter. Move around the pan so the onion doesn’t burn, cook for 10 minutes.
  3. Add the tinned tomatoes and the milk to the pan, take care that it doesn’t burn or bubble over.
  4. Reduce to a simmer and cook for 40 minutes. Season with salt and pepper.
  5. Blend, using a food processor or hand blender.

Tinned Tomato Sauce

Ingredients (to make 1 cup):

  • 1 tin of tomatoes
  • 2 tablespoons of tomato puree
  • 1 teaspoon of red wine vinegar
  • 4 cloves of garlic
  • 4 tablespoons of olive oil
  • Salt and pepper

Instructions:

  1. Heat the oil in a pan and add the sliced garlic. Don’t let it burn, cook until it turns golden.
  2. Add the tinned tomatoes, tomato puree, vinegar and salt and pepper to the pan. Cook for half an hour.
  3. If you wish, you can blend the sauce or leave it as it is.
