Goat meat is widely eaten in some parts of the world, whilst in others lamb, beef, or pork are favored. If you can track down some goat meat, it can be used to make the most delectable curries, stews, and soups. Read on for three key recipes.
Goat and Potato Stew
Ingredients (to serve 4):
- 1 cup of goat meat, cut into chunks
- 1 cup of potatoes
- 2 onions
- 3 tablespoons of harissa paste
- 3 tablespoons of olive oil
- 3 cloves of garlic
- 1 chilli
- 3 tablespoons of yogurt
- 1 handful of fresh mint
- 3 tablespoons of water
Instructions:
- Heat the oil in a pan, and add the sliced onions, chili, and garlic.
- After 5 minutes of cooking, add the chunks of goat meat.
- Meanwhile, boil the potatoes for 10 minutes.
- When the potatoes are cooked, add the harissa to the meat and cook for a further 5 minutes.
- Add the potatoes to the pan, spoon in the water and the yogurt, and leave to simmer for half an hour.
- Just before serving, stir the chopped mint through the dish.
Curried Goat
Ingredients (to serve 4):
- 1 cup of goat meat
- 1/2 cup of coconut milk
- 1-inch sized piece of ginger
- 1 chilli
- 2 cloves of garlic
- 1 onion
- 1 teaspoon each of paprika, cayenne pepper, turmeric, cumin and coriander
- 3 tablespoons of oil
Instructions:
- Heat the oil in a pan, and add the spices, the sliced onion, the sliced garlic, the sliced ginger, and the chili. Cook for 15 minutes, don’t allow it to burn.
- Add the goat meat to the pan, and fry for 5 minutes.
- Add the coconut milk, turn down the heat, and let it simmer for half an hour.
Goat Soup
Ingredietns (to serve 4):
- 1 cup of goat meat
- 1 onion
- 2 leeks
- 2 carrots
- 1 sweet potato
- 1 cup of water
- 2 tablespoons of butter
Instructions:
- Heat the butter in a pan, and add the sliced onions, leeks, and carrots.
- After 5 minutes, add the goat meat to the pan. Cook for a further 10 minutes.
- Add the water and the cubed sweet potato, reduce the heat, and cook for 20 minutes.
