This Vegan Sandwich Makes For the Perfect Lunch

Who says sandwiches have to be boring? Whilst it is easy to get stuck on repeat and make or order the same filling over and over, when you mix it up it’s easy to see that these versatile dishes are tasty, practical, and easy when you’re on the go. Make the filling the night before, and then the assembly is a two-minute job on Monday morning.

Ingredients (serves 2):

  • 3/4 cup of firm tofu
  • 2 teaspoons of barbeque sauce
  • 1 tablespoon of oil
  • 1/2 teaspoon of smoked paprika
  • 1/4 cup of shredded red cabbage
  • 1/4 cup of shredded carrot
  • 1/2 a red onion, shredded
  • Juice of 1 lemon
  • 2 tablespoons of vegan mayonnaise
  • Bread of your choice

Instructions:

  1. Finely slice the tofu.
  2. Heat the oil in the pan.
  3. Mix the paprika with the barbeque sauce and coat each piece of tofu with this marinade.
  4. Fry the tofu until well crisped on each side.
  5. Dice the onion, then mix this with the cabbage and carrot. Pour over the lemon juice and mix well.
  6. Spread the mayonnaise over the bread and assemble the sandwiches.
