Vegan pulled pork is such a nice dish to be able to make, since it’s healthy and satisfying. However, the star ingredient is somewhat unusual; banana peels! Many cultures actually eat the banana peel and it’s totally healthy and edible! So try using it in this recipe and see for yourself!
Ingredients
- 2-3 organic banana peels that are just ripe
- 1 1/2 tablespoons of olive oil
- 1 tablespoon of hot paprika
- 3/4 teaspoon of each chili powder, mustard powder, garlic powder, and onion powder
- 1/4 teaspoon of cumin
- 2 tablespoons of bbq sauce
- Pinch of salt
Recipe
- Peel the bananas, cut off the top and bottom of the peels, and using a spoon, scoop out the excess banana from the peels.
- Take a fork and shred the banana peels so they are in long strands. Then, cut them in half.
- Put the peels into a bowl and add in all the spices and the olive oil.
- In a pan on medium heat put in the peels and then add a splash of water to help steam them a bit.
- Cook for 5-10 minutes until the bananas are soft but haven’t gone too mushy.
- Add in the bbq sauce, cook for another 1-2 minutes, and season with a pinch of salt to finish.
