This Vegan Dirty Rice Is The Real Deal

Dirty rice is a Cajun classic that is called dirty rice because it turns the color of dirt from the addition of chicken livers and some sort of pork product. Now, you can get the same effect and make something just as delicious but vegan so everyone can enjoy dirty rice. This is the perfect side dish to any meal, especially if you’re tired of plain white rice.

  1. First, make some regular white rice. If you have leftover rice of any kind you can use that as well since it will be heated up later with all the other ingredients.
  2. Then, sautee onions and eggplant together for about 5-7 minutes or until the eggplant has started to soften. Add in garlic and cook for one minute.
  3. Then, add in chopped celery, green pepper, fresh tomatoes, paprika, and thyme. Cook this for another few minutes until the vegetables are soft but not completely mushy.
  4. Pour in the rice with a cup of broth and cook everything together until the liquid has absorbed.
  5. At this point, you can also stir in cooked red beans if you want to add them.
  6. Then, just at the end, stir in some salt and pepper along with lemon juice and parsley.
