Do you have a vegan friend that’s coming over? It’s always nice to have a baked good ready when you’re entertaining guests and this vegan banana cake will impress your vegan and dairy-loving friends. It’s super easy to make and it tastes amazing! Here’s the recipe.
Ingredients:
- 3-4 very ripe bananas
- 1/2 to 3/4 cup coconut sugar
- 3/4 cup grapeseed oil
- 2 cups whole spelled flour (either plain or half flour)
- Teaspoon and a half of baking powder
- Half a teaspoon of baking soda
- A pinch of salt
- 1 teaspoon ground cinnamon
- 3/4 cup chocolate chips or chopped dark chocolate.
- 1 cup of walnuts, chopped pecans, or sliced almonds
- 2 tablespoons maple syrup
Instructions:
- In a bowl, mash ripe bananas.
- Add sugar, cinnamon, and oil.
- Add flour, baking powder, and salt to the bowl and mix well. Add chocolate chips or chopped dark chocolate to the batter.
- Transfer the batter to a pan. On top of the cake batter, sprinkle walnuts, pecans, sliced almonds, or chocolate.
- Bake in a preheated oven at 180 F degrees, for about 25-35 minutes or until the skewer comes out clean. Immediately after the cake comes out of the oven, pour about two tablespoons of maple syrup on it.
- The cake should be cooled outside the oven before slicing.
