This Pasta Salad Pairs Great With White Wine

It’s the middle of summer, which, if you ask us, means that the only dinner recipes we’re interested in these days are ones that pair well with chilled white wine. Well, this pesto pasta salad is perfect for just that atmosphere, and it’ll refresh you while filling your tummy so you’re satisfied and blissed out despite the heat. Here is how you can make it.

Ingredients

  • Bowtie pasta
  • Asparagus
  • Peas
  • Parmesan
  • Pine nuts
  • Garlic
  • Basil
  • Lemon juice
  • Salt
  • Pepper
  • Olive oil
  • Cherry tomatoes
  • Fresh mozzarella

Directions

Cook the bowtie pasta per the directions on the package. Drain and set aside. Cut your asparagus up into two or three-inch pieces. Boil in water for seven to eight minutes until it’s super tender. Drain and allow to cool. Also, cook the peas using your method of choice. Boiling is just fine.

To make an asparagus pesto, in a food processor or blender, blend the cooked asparagus, peas, parmesan, pine nuts, peeled garlic cloves, basil, lemon juice, salt, and pepper. Drizzle in enough olive oil to get the consistency you’re looking for.

Toss the pasta in the pesto. Stir in quartered cherry tomatoes and bite-size pieces of fresh mozzarella. This pasta salad is best enjoyed chilled and garnished with parmesan cheese and basil.
