This Microwave Chocolate Cake is Excellent for Last-Minute Entertaining

Have you ever had a friend call to say they’re in the neighborhood and popped around to say hi? But you have absolutely nothing to serve them? As long as you have a microwave, you can put together this chocolate cake which is almost as fast as it takes the kettle to boil!

Ingredients:

  • 1 ¼ cup all-purpose flour
  • 1 cup sugar
  • ¾ cup cocoa powder
  • 1 teaspoon lime juice
  • ½ teaspoon salt
  • ¼ cup butter
  • 1 cup water
  • 1 teaspoon baking soda
  • 2-3 tablespoons milk, if needed 
  • 2 cups dark chocolate
  • ¾ cup whipping cream

Instructions:

  1. Sieve the flour with the cocoa powder and salt.
  2. Add the lemon juice and baking soda to the cup of water. 
  3. In a bowl, combine the butter with sugar and then add in the flour mixture and the water to which you have added the lemon juice and baking soda. Beat well. If you find the mixture too thick, add 2-3 tablespoons of warm milk. 
  4. Pour the batter into an ungreased dish and microwave for 5-6 minutes. 
  5. In a separate bowl, place the chocolate and cream and microwave on high for 1 minute. Whisk together until completely combined, then pour over the cake.
