Ingredients:
- 1 cup of dried green or brown lentils
- 2 tablespoons olive oil
- 1 onion
- 2 carrots
- 2 celery stalks
- 5 cloves of garlic
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 4 vegan sausages
- 1 tin of diced tomatoes
- 4 cups of vegetable broth
- Salt
- Black pepper
- Fresh parsley for garnish
Instructions:
- In a large pot, heat olive oil over medium heat. Add chopped onions, diced carrots, and diced celery. Sauté until vegetables are softened.
