Ingredients:

  • 1 cup of roasted hazelnuts
  • 1 bar (3.5 ounces) of 70% dark chocolate
  • 1-2 teaspoons of zero-calorie sweetener such as erythritol or stevia
  • 1 teaspoon of vanilla extract

Instructions:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Spread the hazelnut on a baking sheet and roast for about 10-12 minutes until the skin starts to crack and the nuts turn golden brown. Keep an eye on them as they can burn quickly.
  3. Remove the hazelnuts from the oven and let them cool for a few minutes. once they are cool enough to handle, rub the hazelnuts with a clean dish towel and remove the skins.
  4. Add the roasted hazelnuts to a food processor and blend for 4-5 minutes until they turn to smooth and creamy nut butter.
  5. In a microwave-safe bowl, roughly chop the dark chocolate and microwave on high power for 30 seconds. Remove the bowl from the microwave and stir the chocolate. Repeat the process until the chocolate is melted and smooth.
  6. Add the melted chocolate, zero-calorie sweetener, and vanilla extract to the processor with the hazelnut butter and blend until everything is well combined.
  7. Taste the Nutella and adjust the sweetness to your liking with more sweetener if needed.
  8. If the Nutella is too thick, you can add a teaspoon of coconut oil or hazelnut oil to thin it out.
  9. Store the Nutella in an airtight container at room temperature for up to 2 weeks.
