While you may think of soup as a warm meal, there are some soups that prove to be an ideal refreshment during the warm summer months. Perhaps none is better for quenching your thirst than Gazpacho. Here’s your guide to making Gazpacho, which could just become your new favorite summer soup.
Ingredients:
- 1/2 red bell pepper chopped
- 1/2 cup water
- 1/3 cup olive oil
- 1 garlic clove
- 2 pounds tomatoes
- 2 cucumbers, chopped
- 2 thick slices bread
- 2 tablespoons vinegar
- 2 tablespoons basil
- 6 cherry tomatoes
- Kosher salt
- Black pepper
Instructions:
- Pour the cucumbers, peppers, garlic, vinegar, water, and tomatoes into a food processor. Blend until smooth and add oil. Season with salt, pepper, and vinegar.
- In a large skillet over medium heat, pour oil before adding bread. Cook until golden and crisp on the bottom.
- Flip the bread over and cook until crisp on the other side.
- Divide the soup into bowls and top off with basil, cucumber, oil, and tomatoes.
